HAM CROQUETTES Two cups finely chopped boiled ham, two cups mashed potatoes, three egg yolks, two tablespoons butter, two tablespoons cream. Add ham to mashed potatoes. Then add cream, butter and three-fourths of beaten egg yolks. Mix well. Mold the ham into pyramid shapes, roll in the beaten egg that remains and then in cracker crumbs. Fry in deep fat. Mrs. L. V. Drane, 1259 W. Twen-tiy-Fifth St., Indianapolis. FRENCH POTATO PUFFS Bake six good sized potatoes (all same size). When done, cut in halves core and mash. Add one-half cup of melted cheese, one-fourth cupmelted butter and one-half cup of cream. Beat until creamy, then add one-half cup diced pimentos and one diced mango. SURPRISE MUFFINS One-half cup commeal, one cup flour, three teaspoons baking powder, one-half teaspoon salt, one tablespoon shortening and liquid consisting of one well-beaten egg with about seven-eights cup of milk. KNICKERBOCKER SALAD Six grape fruits, one can sliced pineapple, two pimentos, twelve firm apples, lettuce, twelve oranges, one bunch celery, one ounce gelatine. Cut fruit and ' celery Into cubes. Add gelatine, which has been soaked In cold water until soft and then dissolved In one cup of boiling water. When mixture has set, place on lettuce leaves and serve very cold. RASPBERRY FRAPPE Dissolve contents of one and onehalf packages of raspberry gelatine In one and one-half pints of boiling water. Stir well and let chill. Pour one can raspberries In dish, pour two-thirds of the gelatine over raspberries, whip the other third and cover over the gelatine. Whip onehalf pint of cream and place on top.
