TURTLE SOUP Take the meat of one turtle and a small piece of boiling beef, if desired, and boil until done. Take meat from broth bones. Run meat through food chopper. Put meat back into broth. Run through food chopper two' parrots, two potatoes, two onions, one stalk of celery, one .slice lemon. JJut this in with meat. Add one large can tomato juice strained, one small bottle catsup, one tablespoon pickle spices tied up in a cloth: thin broth with water. When vegetables are done, add two hard-boiled eggs chopped fine, two tablespoons vinegar. Serve hot. Miss Marie Kline, 1731 Wade St., City. MONACO SANDWICHES Two level tablespoons salmon or shrimp paste, two level tablespoons butter, yolks of two hard cooked eggs, pepper to taste, unbuttered graham or brown bread. Put the yolks Into a bowl with the butter and rub with the back of a spoon until smooth. Add the pepper and fish paste and when these are well blended, spread thickly between slices of bread and trim off crusts. Mrs. Perry Miller, stOVa Tibbs Ave., Indianapolis. PRUNE AMO NUT JAM Three pounds of prunes, three pounds of raisins, three pounds sugar, cups com syrup, three oranges, and one-half pouiid chopped walnuts. Soak prunes, cook them, remove stones and cut fine. Cut raisins and add to the prunes. Chip the rind from oranges and squeeze juice in a bowl. Add sugar, syrup and water in which prunes were cooked. Cook twenty-five minutes. Add walnuts five minutes before taking off the stoves. Miss Alice Vaugn, 2229 English Ave., City. SALLY LI NN Two cups flour, three-fourths cup milk, three teaspoons baking powder, one teaspoon salt, two eggs, two tablespoons shortening, one tablespoon sugar. Sift together flour, baking powder, salt and sugar, add milk, well beaten eggs and malted shortening. Mix well. Bake In greased shallow pan or muffin tins in moderate oven about 20 minutes. Virginia Garland, Box 145, Charlottesville, Ind. FRIED TURNIPS Select medium sized turnips. Peel and cut in slices about one-fourth inch thick. Parboil in salt water until you can pierce with fork. PINEAPPLE PUDDING Make a cream with one and onehalf cups of sugar, yolks of three eggs, one tablespoon cornstarch, onefourth teaspoon salt, and one and one-half cups sweet milk. cups mushrooms, two cups bean sprouts (If desired), four tablespoons Chinese sauce, one pint oysters. Melt the butter, add onions and cook until savory and brown. Take care not to scorch them. Add the diced celery, mushrooms and bean sprouts (if used) and sauce. Cook until celery is tender. Add the oysters and cook until edges curl. Serve hot with Chinese boiled rice.
