COUNTRY' STYIJFO LIGHT BREAD In the evening soak one and onehalf cakes of yeast for 20 minutes In a cup of lukewarm water. When soaked, mix with two and twothirds pints of flour, one teaspoon of salt and one-quarter pint of sugar, adding enough lukewarm water to mix to a medium sponge. Cover and set in a warm place to rise over night. In the morning take five and onethird pints of flour, two tablespoons of salt, one-quarter pint of sugar. Mix together and add the sponge with three-quarter pint of lukewarm water. Alix and knead 20 minutes. Set In warm place to rice. It should be mixed down once and left to rise again before making into four loaves. Let rise to double the else and bake in a slow oven one hour. It should be browned nicely ll\ the first fifteen minutes. 11l winter the flour should be warmed before mixing the bread and a good hard wheat flour should be used at all times.
