TIE best judges of hotels are the men who use them most. Hotel Lincoln’s steadily increasing clientele of successful business men is sound proof of the fact that this is a good hotel. It is not by chance that many of the important business men’s club meet here. It is rather a reflection of the management’s desire to provide an atmosphere reflecting the character and wishes of its guests. Hotel Lincoln AT LINCOLN SQUARE Indianapolis Wm. R. Seeker, Mgr.

Four years of steady, consistent growth the direct result of the courage of an Indianapolis man In putting Into actual practice a novel method of merchandising, Is the history of the Liberty Market of this city. Four years ago Nick Kens, then a well known Indianapolis merchant, conceived the idea of marketing groceries to the retail trade by a simplified method which did away with many of the old overhead charges of the conventional and older type of stores. At the time, friends ol' Mr. Iverz told him the plan was bound io fail, that it stood not the slightest: show of success, that It might attract atentlon for a time, because of its appeal to persons desiring to try something new, but, sooner or later, the older and more conservative merchandising plans would win out and Kerz would find himself without a business. “But despite all these doleful predictions I went ahead,” Mr. Kerz said, “and the result has been that today the Liberty Market Is the largest grocery store In Indiana, and I feel sure that It also Is the most popular. It makes a fellow feel mighty good when a plan In which he has had the utmost faith goes through to a successful finish, especially when all sorts of bad endings have been predieted for It. “In brief, the plan was a simple one. I wanted to eliminate the high overhead delivery costs which Is one of the most expensive and most bothersomo Items in the grocery business. Then I wanted t f build the business to a point where I could get a quick turnover of goods, which, of course, means that merchandise can be handled on a cheaper basis.

“From the very first the plan met with Interest and enthusiasm on the part of the general public. We had not been In business a year, before our quarters became so crowded that It was necessary to move the store to anew location where we would have moro room. Now our present store Is crowded to capacity and we are making use of every inch of available space to take care of our stock and our customers. To accomplish this we have narrowed the aisles, heightened the shelving, slipped In tables In odd corners and done everything we could think of and still we are In need of space. This shows plainer thua any words how CAFE PATRONS DEMAND SERVICE Best of Food, Well Prepared, Required by Public. Gone are the days when food prepared In ny haphazard manner can be expected to satisfy the customer of the downtown case or cafeteria, according to Grace Anna Rust, manager of the Russet Cafeteria, 27 South Meridian street. “The public has been so thoroughly educated about downtown cooking and Is so exacting only the very highest quality of food, prepared f>y trained, competent cooks, and served amidst pleasant surroundings at popular prices, will satisfy It," Miss Rust said. “We opened our cafeteria only a short time

popular the Liberty Market has proved with the general public. ' “Much to our nstanlshment a big mall order business has sprung up. Just how this lioppened we were at a loss to explain at first, because we really had not figured on this angle of he business. But it developed our dally advertising carried In the newspapers with the Idea of altract.lng Indianapolis business was at trading considerable attention In outside towns and the readers of the papers, seeing tho favorable prices offered, began to write In and send us their orders. Now we have a mall order business of greatly surprising proportions.” ago, but the constantly growing patronage It has enjoyed shows we were fully Justified In our Ideas of what kind of an eating place would prove popular In Indianapolis. “It was our particular object, when we organized, to give downtown business and professional men and women a place where they could get a good meal at moderate prices and at the sume time bo assured of surroundings as pleasant as they would rnoet at the most expensive eating places. “Asa matter of fact, there Is a great deal of psychology about lha case business and the human appetite, l’ut a person in unpleasant surroundings and | the appetite will disappear, and In time the health of the Individual will be affected. On the other hand, with pleasant and agreeable surroundings everything Is entirely different. We have tried our best to create this effect of quiet and restfulness to the eye and nerves of our patrons. “Wo hars arranged pleasing decorative

effects, soft lights and quiet colors, and this, with the courtesy of our employes, has been conducive to satisfactory surroundings. “Another thing we have made strong efforts to attain Is the abolition of the monotony of menus which has made case meals distasteful to so many persons. We change our menus daily and thus get away from the constant repetition to which so many object. “The quality of our foodstuffs Is the highest. We tuy carefully and exercise the same care In buying In large quantities the prudent housewife uses when she makes a small purchase of food. Then we do our own baking and this makes It possible for us to give the personal attention to the baking so necessary to obtain the best results. Miss Rust, president and manager of the company, has had wide experience In w r ork of this character. For eight years she conducted a tearoom during the summer season at Bay View, Mich., and for a long time was connected with the food administration of Columbia University. She also has been with tho the Colonnade Cafeteria Company in Pittsburgh and Cincinnati. Assisting her In the management Is Charlotte Rust McPherson.
