When Mrs. Hooper came down to the kitchen she found her buckwheat sponge light and foamy. She stirred It up well and added one-quarter of a rounded tabiespoonful of butter, which ahe melted after she had measured it; one-half teaapoonful of soda dissolved in one tableapoonful of warm water. She beat it thoroughly and to get a well-rounded cake she poured it from a pitcher on to a hot griddle. “It is growing harder every day to buy straight plain buckwheat flour to make these griddle cakes this way.” said Mrs. Hooper when they had all been served with a helping of the delicious brown cakes. “Hardly any of the grocers have fit any more. •Self-raising’ Hours have taken its place and they say they have no call for it.”

“Preparing a meal more than ten minutes before it is eaten seems to be no longer the fashion,” remarked Henry. “Well, ’every one is in such a fearful hurry these days,” Mrs. Hooper went on, “that they really can’t take the time to prepare things in the old way, I suppose. "You can have meat every day in the week, but if you use a smaller quantity and cheaper cuts the cost will be reduced so that you can buy more dairy products and fruit and vegetables.” “These budgets make me nervous,” was
