Your food store is agajn filled to rafters with chickens; If you remember, we said last week that with foods like rice, the price Is affected by the form of the food. We said that minute rice costs you considerably more than medium grain rice. The same Is true of poultry. A whole chicken costs less than a cut-up one because you're paying the butcher to do the cutting. So, don’t neglect the "do-it-yourself" approach in cutting down on the food bill. Chickens are fairly simple creatures, with 2 legs, 2 wings, 1 breast, a neck, and a back. You can easily cut a whole fryer into pieces and save 4 cents a pound by doing so. Four cents per pound on a 3-pound fryer com3s to 12 cents saving on just one bird. Interested In a good chicken and rice dish? Try this one: CHICKEN RICE CASSEROLE 2 tablespoons butter 1 onion, chopped fine 1 cup celery 1/2 cup blanced almonds 1 cup ricd (cooked) 1 cup chicken ‘ 3 cups chicken broth 1 teaspoon salt Brown onion in butter, add celery, rice and cook slowly for a few minutes, stirring constantly. Add broth, chicken and almonds and seasoning. Pour In well-greased baking dish. Bake at 350 for 30 minutes. Stir well and continue baking 60 minutes. Very few ever think of including hot biscuits or freshly made gingerbread in the menu of a quick meal, yet they can be prepared and baked within a matter of minutes by using Master-Mix. This is a blending of dry ingredients and shortening that can be made in advance, and which will keep for at least six weeks without refrigeration. By adding the other ingredients needed for each type the mixture may be used as the basis for muffins, griddle
cakes, waffles, cakes, cornbread and coffee cake. To make hot biscuits, for Instance you would take 3 cups of mixture, add 2/3 cup milk, knead slightly and the biscuits are ready to be rolled. Ten minutes later they are all set to be taken from the oven. Biscuits also make delicious topping for casserole dishes or try eggs added to a white sauce and serve over hot biscuits. This makes an Inexpensive meal. If you would like a MasterMix formula and the recipes showing the variety of ways in which it may be used, please write to Miss Adeline Belnlng, Cooperative Extension Service, 441 City-County Building, Indianapolis, Ind., 46204, or telephone 633-6110.
