HELPFUL HINTS FOB HOUSEWIVES
Utensil For Cooking Preserves In Jars.
Some housewives iu cooking their preserves perform that operation iu the jars or caus in which they (the preserves) are to be kept. Unfortunately when the water boils vigorously it sometimes upsets the jars and spills their contents in the boiler. A Nebraska woman has designed a cooking utensil which prevents this accident Two rings of different diameters. for different size Jars and cans, and flat perforated plate make up the equipment One of the rings acts as a support for the plate, and on top of the plate the other ring sits and forms a guard for the jar, to prevent it upsetting. The water can boil freely through the perforations in the plate, and this little platform keeps the top of the Jar above the top of the water, so none can get into it
Fruitists’ Decorations. The new fruit decorated crapes, etamines and eponges help fill the demand for odd and striking color combinations and afford relief from the familiar floral decorations or the somewhat overworked conventional designs shown on Balkan embroidery and post impressionist fabrics. The decorations of the fruitists, as the designers of these patterns are called, are not apples or plums or grapes or any other fruits ever seen by man, but they sug-! gest fruit, nevertheless, and are inter- j esting both in form and color.
Helpful Hints. To boil milk without fear of burning, place three or four tablespoonfuls of water in the pan. let it boll rapidly a minute or two, then add the milk. A little bit of soap added to the starch will make the clothes iron better and have a lovely gloss. For a nervous headache, knot the hair high on the head, remove the waist and, while bending over the wash basin, apply a sponge soaked in hot water to the back of the neck. Repeat this several times and the pain will disappear. Chocolate Pie. One pint of milk, one heaping tablespoonful of corn starch, yolks of two eggs, sugar to taste and chocolate to taste. Bananas or cocoanut may be used with this same custard, omitting the chocolate, adding extract to taste, placing bananas in the bottom of baked pastry shell and pouring custard over them. Finish with meringue made of whites of two eggs beaten till stiff; then beat into them four tablespoonfuls of granulated sugar; spread on pie; brown in oven.
Oatmeal Cookies. Cream three-fourths of a cupful of butter with one cupful of sugar and add two well beaten eggs. Sift threefourths of a teaspoonful of soda into two cupfuls of flour, add one-half a teaspoonful of salt, one teaspoonful of cinnamon. Now add to the mixture two cupfuls of uncooked rolled oats and one scant cupful of chopped raisins sprinkled with a little flour. Drop by the teaspoonful into a greased pan and bake in moderate oven.
Sour Cream Sauce. When cream is only slightly sour It may be made delicious to serve with puddings, etc., in the following way: Put it into a basin with the juice of a lemon and a tablespoonful of sugar and whip until quite stiff. This treatment makes it excellent and increases the quantity at the same time.
A Paint Cleaner. Save the tea leaves ^for a few days, then steep them in a pail for half an hour; strain and use the tea to clean varnished wood. It requires very little polish, as the tea acts as a strong deterrent, cleaning the paint from all impurities and making it equal to new.
Chicken Croquettes. Two pounds of chicken meat chopped or ground One, two eggs beaten, one slice of bread crumbed, one-half cupful of sweet cream, one tablespoonful of butter, salt and pepper. Make Into balls, dip in eggs, then in cracker crumbs and fry.
Baby’s Bib. A dress shield may be cut in half and each half used as the lining for the baby’s bib. Make a removable cover of linen or lawn edged with lace or embroidery. The Recorder Print
