Health & Nutrition by Judith Sheldon
THE PROTEIN FACTOR: One of (he criticisms often heard about diets that focus on plant foods is that they are protein deficient. The fact is that meat, fish, or poultry are not the only sources for this macronutrient. Besides that, although most vegetarians ingest less protein than meat, fish, and poultry eaters, if their meals are well planned, their diets are likely to equal or exceed the Recommended Daily Allowance (RDA) for this nutrient. Eating plant foods that provide complementary proteins — basically legumes and whole grain products (for example beans and rice or pasta) — during the same day, but not necessarily at the same meal, will produce different essential amino acids needed for continued good health. Before starting on a vegetarian diet, or any regimen that restricts the intake of certain foods, it’s wise to consult with your doctor first to be sure you don’t have problems that would be worsened by a restrictive diet. You should then ask your doctor to recommend a nutritional consultant who will help you avoid shortchanging yourself on nourishment. A brief list of nutrient sources provided by the Vegetarian Source Group in Baltimore, Md., and reprinted in the July/August, 1994 issue of “Food Insight,” follows: Protein: Lentils, tofu, nuts, seeds, tempeh, peas Iron: Dried beans, spinach, chard, bulgur, dried fruit Calcium: Collard greens, broccoli, kale, turnip greens, fortified soy milk, fortified tofu Overall, the one basic essential is variety. Eat a wide variety of foods including whole grains, fruits, vegetables and legumes.
LEGAL NOTICES
NOTICE Notice is hereby given that Kankakee Valley Rural Electric Membership Corporation has filed before the Indiana Utility Regulatory Commission a request for approval of the application of the Whole sale Power Cost Tracking procedures established by the Indiana Utility Regulatory Commission in Cause No. 34614. This request is being made by reason of a decrease in Wabash Valley Power Association’s wholesale rates to its member REMCs also through application of tracking procedures. This decrease in Wabash Valley’s rates is a result of a settlement agreement approved by the Indiana Utility Regulatory Commission in IURC Cause No. 39914 by which Hoosier Energy Rural Electric Cooprative, Inc. was granted a decrease to its firm power rate. This decrease will be slightly offset by an increase in Indianapolis Power & Light Company’s wholesale firm power rate approved by the Federal Energy Regulatory Commission in Docket No. ER94-974000. This IPL increase has minimal effect on Wabash Valley’s costs and the net effect of both changes will be a decrease in Wabash Valley’s rates to Kankakee Valley REMC. This action will result in a decrease in the wholesale power cost tracker included in the rates charged by Kankakee Valley REMC. This decrease will result in a decrease to the consumers of Kankakee Valley REMC receiving service pursuant to the schedule of tariffs set forth in Appendix A on file at the Indiana Utility Regulatory Commission showing the revised schedules and the rates to the members which will be effective for the first practical consumption period following approval of such revised rates by the Indiana Utility Regulatory Commission.

SALMAGUNDI: Brother Peter (Reinhart) has a theory, “Every meal,” this member of an Eastern Orthodox service community believes, is a form of communion." The owner of Brother Juniper’s Case in California ol.cred readers an ecumenical and gustatory experience in his first book, “Brother Juniper’s Bread Book,” that carries over in SACRAMENTAL MAGIC IN A SMALL-TOWN CAFE (Ad-dison-Wesley. $20.00), as appetiz ing for the conversational pieces as for the confections. He stresses simplicity in such traditional servings as New England Clam Chowder or more exotic viands as Roasted Garlic and Grilled Vegetable Sandwich. Intriguing ... The food of the bayous may be a bit hot for many tastes but a recipe for Black Skillet Com Bread seems a neutral palatepleaser in FRANK DAVIS COOKS CAJUN, CREOLE, AND CRESCENT CITY (Pelican Pub., Gretna, La.: $17.95). Davis, chef and outdoorsman, annotates his menu of Pelican State delights with witty asides “000000-weeee!" is his opinion on the Com Bread: “This ... is good stuff!" sums up N’Awlins Battered Chicken. The enthusiasm is infectious ... Yet to be published, PRODUCE PETE’S FAR MACOPEIA, by Pete Napolitano (Morrow: $15.00), is a guidebook for personal use or gift-giving Napolitano, a N.J. produce dealer and frequent TV guest, offers a wide recipe range but the value of his text comes more from his firsthand knowledge of fruits and vegetables and his advice on how to select and when to purchase them. ©1994 by King Fmlufm Synd.
