Even m a small garden, zucchini proliferates in an overwhelming way And tor non-gardeners, sometimes roadside stand prices are so attractive that we find we overstock the fridge Don’t be intimidated There are many things you can do besides baking zucchini bread You can cut up, into a saucepot, two or three pounds zucchini, about three thinly sliced celery ribs, one diced medium onion, one diced green bell pepper, a one-pound can tomatoes, crushed (or one eight ounce can tomato sauce or puree or a couple of peeled, diced fresh tomatoes), salt, pepper, a few leaves fresh basil and 1/3 cup olive oil Stir it all up and bring to a boil Lower heat, cover and simmer about an hour or until zucchini is quite soft If too soupy, cook it, uncovered, a bit longer until liquid evaporates some what Just before turning off the heat, you may stir in l/ 4 cup little pieces of imported Italian Parmesan cheese Let stew stand a while to develop flavors before serving This freezes beautifully Another dish: If the zucchini are small, say up to eight inches long, halve them crosswise, cut the halves in half and steam them until just fork tender, still a little resistant but not undercooked Drain well, transfer them to a bowl and while still hot, toss them with fresh or dried mint, salt, pepper and a simple vinaigrette (three parts ©live oil and, for this, a scant one part wine vinegar) I use a little less vinegar than normal for a vinaigrette J like just enough dress ing so that it clings to the zucchini w ithout forming a p<x>l in the bottom of the bowl The amount you use depends on how much zucchini

NEW DISEASE EMERGING: A new disease has been discovered by a doctor in Duluth, Minnesota According to a release from the News & Information Office of the University of Texas Medical Branch at Galveston, this potentially serious, new disease compares to the emergence of the hantavirus (the organism linked to rodents and found in parts of the Southwest recently) and Legionnaires' disease Apparently, it's a tick-borne dis ease caused by a bacterium called human granulocytic ehrlichia Dr David H Walker, Director of the Center for Tropical Diseases at UTMB, says the bacterium had never been detected in human beings before this discovery The illness strikes during the sum mer and produces flu-like symptoms When treated with the right antibiotic, patients make a rapid recovery Since influenza doesn't strike in the summer, doctors should be suspicious that a person with what seems io be the “flu" may actually have this new disease, especially if the patient has had a recent tick bite (One reassuring note Some researchers believe ihat most people who gel the disease recover without being diagnosed However, they caution that it's best to see a doctor if you feel flu-ish when you shouldn't be, especially if you've been any place where there are ticks.) ANOTHER medical mystery seems to be on the verge of being solved, even while the cause remains largely undiminished For several years, scientists have found that in some areas of Florida’s swamplands, there's been a rise in the numbers of newly hatched male alligators with deformed reproductive organs In Scotland, doctors have found an increase in the numbers of young boys with similar deformities There is also a growing male fertility problem in the United States.
