GOOD DEER HUNTING KEEPS HERDS IN CHECK Jim Mitchel! has two main goals as the DNR’s deer management biologist. "In Indiana, it is important to reduce or stabilize deer herds in most counties. Equally important, we must give Hoosiers first-rate opportunities to hunt and watch deer. I think we have succeeded in both.” Indeed, Indiana's deer harvest is proving to be the highest ever. Hunters took 19,880 deer in the first archery season, 26 percent more than last year's harvest at this time. "This is good news for our hunters who enjoy the outdoors and putting food on their tables. It’s good for Hoosiers living in counties with too many deer,” he said. Deer hunters also had a banner year in the firearms season, bagging a record 66,868, 11 percent more than last year’s harvest at this time. At press time, figures were not available for muzzleloader and late archery seasons, but Mitchell is confident that the 1991 deer harvest will exceed 100,000 deer. “At this time, hunters have taken 86,748 deer in just two seasons,’’ Mitchell explained. "This is almost equal to what hunters took in all four seasons last year.” The 1990 deer harvest for all seasons was 88,763. Mitchell says this record-break-ing harvest is due to DNR season changes that allow hunters to take more antlerless deer (does and button bucks). Deer biologists can manipulate the size of deer herds by issuing antlerless permits. If too many deer live in an area, the DNR issues additional antlerless permits. "Anterless harvests limit the number of does that can bear offspring. When hunters take does, they reduce the size of a deer herd,” Mitchell said. "Deer in proper numbers can be a benefit to all Hoosiers. "This is the second year that hunters have harvested more anterless deer than adult bucks,” Mitchell continued. "The decline in the buck harvest shows me that there is a healthy, but steady decline of deer herds in counties where populations are too high. ” The DNR has relaxed deer regulations to provide top hunting while keeping deer populations in check. The DNR offered more than 120,000 antleriess permits to hunters in 1991, versus 71,500 permits in 1990. Also, the license of firearms season was consolidated to allow hunters to hunt with a shotgun, handgun or muzzleloader on the same license. Hunters who bagged an antlered deer during

firearms season were allowed to buy a muzzleloader license and participate in that hunt as well. Mitchell said, "Our research shows us that we can control deer herds while giving hunters and wildlife watchers the chance to pursue their outdoor interests." The DNR reminds Hoosiers that all 1991 harvest figures are preliminary totals. 1 The DNR’s final harvest figures will be slightly higher. Dear Betty Crocker Question! Do you have some ideas for festive Christmas bread shapes? 1 have a sweet yeast dough recipe 1 like. H.M., Sheldon. 1A Answer: Yeast dough can be shaped into candy canes and decorated with glaze, maraschino cherries and candied fruit. Or form the dough into 2-inch balls and arrange them in a Christmas tree shape. For the decorations, use garlands of thick frosting piped onto the cooled bread and bits of candied fruit. A wreath of braided dough strips can be similarly shaped and decorated. Question: A recipe I have calls for "cream fondant.” What is it? G. 8., Lancaster, PA Answer: Fondant is a sweet, creamy, sugar paste that is used in candies and icings. Cream fondant is the pourable version of fondant you've either made from scratch or from fondant powder. It may be called "prepared fondant" if you're buying it from a confectioner's specialty shop or mail order catalog. Question: Can 1 freeze cheesecake? M.C., Elmira. NY Answer: Freezing depends on the type of cheesecake. Cheese cake-like desserts made with sweetened condensed milk won’t freeze well. Traditional baked cheesecakes made with eggs and cream cheese may keep in the freezer, well wrapped in moisture-vapor-proof wrap, for up to two months. Do you have a cooking question? Write Dear Betty crocker. Box 1113, Dept. Betty, Minneapolis, MN 55440 Up of ths week: Crepes have the distinction of being a very dressy dessert without being difficult.
