Southwestern Chili With Dumplings— A South-Of-The Border Delight Warm up this fall with a tempting new twist on chicken and dumplings. Southwestern Chili with Dumplings is a delicious Tex-Mex dish which combines cut-up cooked chicken and dumplings with zesty chili. Preparation is easy. Simply simmer the chicken, tomato sauce and chili seasoning in a 4-quart Dutch oven. Then stir in the beans and com and heat to boiling. Upon boiling, drop dumplings, made with Bisquick baking mix. commeal and milk, onto the hot chili. Just before serving, top with shredded Cheddar cheese. itl a O : ■vv ?- < - Southwestern Chili With Dumplings 2 cups cut-up cooked chicken 1 cup water 1 can (15 ounces) tomato sauce 1 package (1 3/4 ounces) chili seasoning mix 1 can (15 ounces) black beans, undrained 1 can (8 ounces) kidney beans, undrained 1 can (8 ounces) whole kernel corn, undrained Dumplings (below) 1/2 cup shredded Cheddar cheese (2 ounces) Mix chicken, water, tomato sauce and seasoning mix in 4-quart Dutch oven. Heat to boiling; reduce heat. Cover and simmer 10 minutes, stirring occasionally. Stir in remaining ingredients except Dumplings and cheese. Prepare Dumplings. Heat chili to boiling; reduce heat to low. Drop dough by 12 spoonfuls onto hot chili. Cook uncovered 10 minutes. Cover and cook 10 minutes longer. Sprinkle with cheese.
