Dear Betty Crocker Question: What is the difference between apple juice and apple cider? E.L., Coquet, MN Answer: Both terms have been used to describe the sweet liquid pressed from apples. Pasteruized apple juice or cider is available year around in supermarkets. The name “cider" is more often used than juice for the freshly pressed, unpasteurized apple juice available in the fall. But, again, the terms are interchangeable. Question: Some recipes say “cream sugar and shortening” while others say to “beat until light and fluffy.” What’s the difference? 0.G., Santa Fe, NM Answer: They are very similar. Technically, if you beat until light and fluffy you add more air. Creaming or beating shortening and sugar to a smooth, fluffy consistency for cake contributes to fine-textured cake. Question: My oatmeal cookies come out so thin. What do you suppose is the problem? R.8.F., Lake Placid, NY Answer: Short of seeing your recipe, I can give you a few suggestions for making oatmeal cookies thicker and more chewy Be sure to measure flour, sugar and shortening accurately as that can have an effect on the cookies spreading during baking, making them thin and crisp. Also, if you bake cookies on a cooled cookie sheet, they won’t spread excessive before baking. Finally, you may be over-baking the cookies. They will be more tender and chewy if removed at the low end of the baking time. Do you have a cooking question? Write Dear Betty Crocker, Box 1113, Dept. Betty, Minneapolis, MN 55440. Up of the Week: Even though most refrigerators have compartments for eggs, it’s better to store eggs, covered in their own container, on main refrigerator shelves.
