Two young ladies, Rachael Gravseth and Lana Cornett, Koontz Lake, won first place in the pumpkin baking contest during the fourth annual Walkerton Fall Festival. The girls submitted pumpkin squares with cream cheese frosting. The first place winners received a check for $25.00. Pumpkin Squares */i cup vegetable oil 1 can (16 oz.) pumpkin 4 eggs, beaten 2 cups buttermilk baking mix 2 teaspoons ground cinnamon Cream cheese frosting (recipe follows): Heat over to 350 degrees. Beat sugar, oil, pumpkin and eggs in large mixing bowl on medium speed, scraping bowl occasionally, I minute. Stir in baking mix and cinnamon. Pour into greased 13 x 9x3 inch baking dish. Bake until wooden pick insterted in ceneter comes out clean, 25 to 30 minutes, depending on how hot your oven is. Cool. Frost with cream cheese frosting, cut into squares, store in refrigerator. About 4 dozen. Cream Cheese Frosting I package (3 ozs.) cream cheese, softened ‘/i cup margarine or butter, softened 1 tablespoon milk 1 teaspoon vanilla 2 cups powdered sugar Beat cream cheese, margarine, milk, and vanilla until creamy. Stir in powdered sugar until smooth and of desired consistency.

SECOND PLACE WINNER The second place winner was Mary Lou Diedrick, Route 5, Box 398-A, Walkerton, with her pumpkin log entry. She received $15.00 for her winning entry. Pumpkin Log 3 eggs 1 cup sugar ’/j cup canned pumpkin 1 teaspoon lemon juice J /«cup flour 1 teaspoon baking powder Vi teaspoon salt 2 teaspoons pumpkin pie spice 4 cup chopped nuts (walnuts) Powdered sugar on hand 1 kitchen towel to roll cake after baking Filling & Topping 2 cups powdered sugar 2 (8 ozs.) cream cheese, room temperature 4 tablespoons butter or margarine. room temperature Vi teaspoon vanilla Blend first four ingredients until smooth. '/« to ’/j cup chopped nuts 3 maraschino cherries Beat 3 eggs on high speed of mixer for 5 minutes. Gradually on medium speed, beat in 1 cup sugar. Then Vj cup pumpkin. 1 teaspoon lemon juice, mix in % cup flour. 1 teaspoon baking powder, */i teaspoon salt and 2 teaspoons pumpkin pie spice. Spread on well greased and floured 9x13 jelly roll pan. Bake at 375 degrees for 15 to 20 mintues. Turn out on towel that has been
sprinkled with powdered sugar, roll up from narrow end and let cool. When cool, unroll and remove towel. Spread with filling (reserve some filling for topping) sprinkle with */j cup chopped nuts, roll up, spread on topping, sprinkle with nuts, place cherries. Refrigerate at least four hours or overnight. The judges, Wanda Pontius, Velma Shores, Peggy Kearney and Jay Potts were given a hard job to pick out the winners of the baking contest. They sampled each and every entry, not only once, but sometimes twice. KOONTZ LAKE LIBRARY FALL PROJECTS Our fall crafts will begin with a basket class taught by June Ketcham on October 23rd at 9:00 a.m. The basket will be made in one session. Cost of materials will be $15.00. There are still openings, just call 586-3353 to register. October 31st will find the Library ready for Halloween. We will have our Story Time Halloween party from 12:00 - 2:00 p.m. Costumes are not necessary, but it is fun to dress up. Everyone is welcome to come and join in the fun. November 2nd Nora Wilson, watercolor artist, will have her paintings on display. Her paintings will be here until November 30th. November 10th is the Holiday Workshop. It will be at 1:00 p.m. C.S.T. and 2:00 p.m. E.S.T. You can make a craft to take home. There will also be a display of simple sewing gift projects, holiday ideas and a sampling of foods. A cost of $1.50 will cover craft and food samples. Everyone is welcome to come and take a peek into the holiday season. FOOD SUPPLEMENTS ARE AVAILABLE THROUGH WIC PROGRAM If you are pregnant, breastfeeding. have an infant or children under five years of age, you may be able to qualify for the WIC Program. The WIC clinic site in Walkerton is located at the United Presbyterian Church, 512 Georgia Street. We are there on the fourth Tuesday of each month. Certain income guidelines and nutritional screening must be followed to qualify you for the WIC services with the process being repeated every six months to determine continued eligibility. The next clinic will be held on Tuesday. October 24, at the Presbyterian Church and if you have any questions please call 1-287-7261. South Bend. CULVER WINS JOHN GLENN INVITATIONAL VOLLEYBALL TOURNAMENT SATURDAY John Glenn High School hosted the volleyball invitational on Saturday with Culver being crowned the champions. The first match was between Culver and Oregon-Davis and Culver won by scores of 15-3 and 15-9. The second match had Knox winning over Glenn 15-13 and 15-11. The third match found Glenn winning over Oregon-Davis 15-12 and 15-11. In the fourth match, Culver beat Knox 15-12 and 15-2. The third round found Knox winning over Oregon-Davis 15-7 and 17-15. The final match had Culver topping Glenn 8-15, 15-13 and 16 14. The team records after the action are Oregon-Davis 11-12; Culver 16-6; Glenn 5-13 and Knox 8-12. Tourney leaders for Glenn included Ingrid Boise, who had 100 percent serving and 83 sets and nine kills. Tammy Rupel made 37 passes and had 13 kills and Tricia Kerckhove had 12 kills. TRI KAPPAS MEET IN NORTH LIBERTY Zeta Pi chapter of Tri Kappa held ti.cir October meeting at the home of Alice Quigley, on the 6th, with 16 members present. The meeting was called to order by Irinda Slater, president. The minutes were read and approved. The various committees reported on activities planned. A card party for members, spouses and friends will be held on Saturday, October 24, at the Greene Twp. Community Building. The annual pecan sale is coming up in November. Pecans will be available at Ist Source Bank, North Liberty, or from any Zeta Pi member. Prices will be announced at a later date. The November meeting will be * held on the 11th, at the home of Christine Houston. Members are to meet at the United Methodist Church parking lot, at 7:00 p.m., to car pool. Members are to bring items for the auction sponsored by the ways and means committee.
