Fabulous Fast Foods — Fish And Fresh Veggies

Garden fresh tomatoes, zucchini and green peppers and tender, moist, delicate flavored cod — from the icy waters of the North Atlantic — are unbeatable hot weather fare! An easy-does-it entree, Cod Siciliano also carries a bounty of good nutrition, including complete low-fat protein, complex carbohydrates and essential vitamins and minerals...plus the special health benefits which come from eating fish. Studies published in the New England Journal of Medicine indicate that “The consumption of as little as one or two fish dishes per week may be of preventive importance in relation to coronary heart disease.” A fabulous fast food, cod (often called scrod) takes only minutes to prepare whether you buy it fresh or frosen. It can be baked, sauteed, broiled, oven steamed or poached. No matter which method you select, estimate cooking time this easy way: Place fish on counter and measure it with a ruler at the thickest part. Time it as follows: • 10 minutes per inch • 20 minutes per inch if frozen Cod Siciliano 4 Servings 1 one pound pkg. frozen North Atlantic Cod fillets 1 pound linguini 4 tablespoons olive oil 1 large sweet onion, thinly sliced 2 sweet peppers, red and green, cut in julienne stripe 2 medium zucchini, thinly sliced 4 large tomatoes, cut in wedges 1/2 cup fresh basil (or more), chopped 1/4 teaspoon red pepper flakes (optional) Grated Parmesan cheese (optional) Do not thaw frozen fish. Brush fish lightly with margarine or oil; bake at 450 T. in non-stick or lightly greased

IN MEMORY OF AMY OVERTON With you a part of me hath passed away; For in the people forest of my mind A tree made leafless by this wintry wind Shall never don again its green array. Chapel and fireside, country road and bay Have something of their friendliness resigned; Another, if I would, I could not find, And I am grown much older in a day. But yet I treasure in my memory Your gift of charity, and young heart’s ease. And the dear honor of your amity; For these once mine, my life is rich with these. And I scarce know which part may greater be — What I keep of you, or you rob from me. For an August 5 Birthday From Your Family

There were approximately 50 family members present traveling from as far as Seminole, Florida, Illinois and many parts of Indiana, who joined in the festivities featuring homemade delectables, dancing and a variety of games. Assisting their parents with the arrangements were their son, Dennis Sobat, of DeMotte, and daughter and son-in-law, David and Sandry Gawor, of Valparaiso. Special entertainment of dance and song was provided by Dennis Sobat and Sandra Sobat Gawor. Thomas Kruse, of Valparaiso, joined the pair with his Elvis Presley routine and Janice Sobat Mitchell, a niece, of Schererville, narrated. Family members registered and supplied biographical information to Camille Sobat Mann, a niece, of Schererville, for the permanent family album she is creating.
