Cajun is country cooking, a cross-cultural mix. Today Cajun food is associated with spicy, southern Louisiana food. Originally, these people who settled along the swamps and bayous came from Brittany. They were French peasant fisherman who found their way to Nova Scotia and started a colony called Acadia Cajun Pork Chop* with Potato Stuffing 6 lean pork chop* (1/2 inch thick) 1/2 teaspoon garlic salt 1/4 teaspoon pepper 1 can (8 ounces) tomato sauce Betty Crocker Potato Buda mashed potatoes (enough for 4 serving*) 1 cup chopped onion 1/2 cup chopped celery 1/2 cup chopped green pepper 3/4 cup margarine or butter 1/4 teaspoon dry mustard 1/8 teaspoon ground red pepper 8 slices bread, cut into 1/2inch cubes (about 6 cups) Heat oven to 375*. Cook pork chops in 10-inch skillet until brown on both sides. Arrange in ungreased rectangular baking dish, 13x9x2 inches; sprinkle with garlic salt and pepper. Pour tomato sauce over top. Prepare potatoes as directed on package for 4 servings; reserve. Cook onion, celery and green pepper in margarine in same skillet over medium heat until tender. Stir in mustard, red pepper and bread. Stir in potatoes. Spoon potato mixture onto each pork chop. Bake uncovered until pork chops are tender, 45 to 60 minutes. 6 servings.
