Outdoor Cooking Steak You Can Bank On
Once you discover the budget-stretching economy of flavorful, marinated chuck steak, you may want to collect a variety of marinated beef steak recipes. One variation is Savory Beef Blade Steak. While a marinade enhances the flavor of steak, it also tenderizes it. It’s the acidic ingredient in the marinade that softens the muscle fiber and connective tissue of the meat. For steak that’s tender enough to broil, it should marinate at least six to eight hours or even overnight. Proper cooking is also essential for tenderness. Cooking a blade steak at too high a temperature or for too long will produce less tender results. For optimum tenderness as well as juiciness, broil the steak over a moderate fire and cook just to rare or medium. When selecting a chuck blade steak for marinating and broiling, look for one that is 3/4 to 1 inch thick. This cut is easily identified by its long narrow blade bone and variety of muscles of varying sizes. One steak will be just right for the smaller family while a larger family or gathering calls for two or more. In general, you should allow two servings for every pound of blade steak. " - i' Keep the food budget in line with economical chuck steak that can be successfully broiled on the grill when first tenderized in a flavorful marinade. 1 1/2 teaspoons sugar 1 teaspoon salt 1/2 teaspoon basil leaves 1/4 teaspoon celery seed 1/8 teaspoon pepper Combine vinegar, water, onion, sugar, salt, basil, celery seed and pepper in small saucepan and cook slowly 10 minutes, stirring occasionally. Cool. Place steak in utility dish or plastic bag; add marinade, turning to coat. Cover dish or tie bag securely and marinate in refrigerator 8 to 8 hours (or overnight), turning at least once. Re* move steak from marinade. Place on grill over ashcovered coals eo surface of meat is 4 inches from beat. Broil at moderate temperature 7 to 10 minutes on each side, depending on degree of doneness desired (rare or medium). 4 servings.

RECEIVES NURSES CAP Mary Green, Rural Route 4, Walkerton, was among the 76 students who received their nurse’s caps from Memorial Hospital's School of Nursing, at 8:00 p.m., Friday, May 31, in the First Presbyterian Church, South Bend. During the candlelight service the students carried small lamps, symbolic of the lamp carried by Florence Nightingale in the battlefield during the Crimean War. After receiving their caps, students lit their candles from a lamp held by Lori Anglemyer, School of Nursing Student Association.
Twenty-four Hour Salad can be an around the clock favorite. Prepare Old-fashioned Fruit Dressing. Combine fruits and marshmallows. Pour the dressing over the ingredients and toss. Cover and chill 12 to 24 hours. Serve in a salad bowl or in lettuce cups. If you like, garnish with orange sections and maraschino cherries. 8 to 10 servings. Old-fashioned Fruit Dressing 2 eggs, beaten 2 tablespoons sugar 2 tablespoons vinegar 2 tablespoons pineapple syrup (from the canned pineapple) I tablespoon butter or margarine Dash of salt 1/4 cup chilled whipping cream Combine all ingredients except the whipping cream in a small saucepan. Heat just to boiling, stirring constantly. Remove from heat and cool. In a chilled bowl, beat the cream until stiff. Fold in the egg mixture.
