Celebrate The Harvest With Homemade Freshness
Don’t let the summer pass without taking advantage of this season's harvest, whether it be from your own garden, local market, or nearby orchard. Fresh fruits and vegetables offer an inexpensive way to eat splendidly, to make meals more nutritious, and to exercise your own creativity. For a new way to use tomatoes, try these recipes for Chilled Tomato Soup with Dill and Tomato Mousse. They were developed by the Home Economists at Kitchen Aid using the fruit/vegetable strainer attachment used with their mixers This timesaving device purees soft fruits and vegetables while separating seeds, peeling and core. Serve this cool soup alone or as the first course of a hot meal. The mousse is a refreshing summer treat to serve with fish or meat. Either way, you and your family are certain to enjoy their garden fresh flavor. Chilled Tomato Soup With Dill 2 pounds ripe tomatoes, quartered 2 tablespoons butter 1/2 cup minced onion 1 clove garlic, minced 1/2 teaspoon ground allspice 3 tablespoons flour 2-1/2 cups chicken broth 1/4 teaspoon salt 1/8 teaspoon pepper Pinch sugar 1 tablespoon chopped fresh dill or 1 teaspoon dried dill weed Sour cream Cucumber, pared, seeded and chopped Puree tomatoes and set aside. Melt butter in a large pot over medium heat. Add onion, garlic, and allspice; saute for 3 minutes. Stir in flour and cook for 2 minutes, stirring constantly. Gradually add chicken broth and stir until smooth Stir in tomato puree, salt, pepper, and sugar. Bring to a boil, reduce heat and simmer 20 minutes Remove from heat. Stir in dill Refrigerate until well chilled. Serve with a dollop of sour cream and a sprinkling of chopped cucumber. Yield: 4 to 6 servings (about 5 cups).

Tomato Mousse 3 large tomatoes, eut into sixths 1 teaspoon salt 2 teaspoons Worcestershire sauce 1/4 teaspoon pepper 1/2 teaspoon chervil 1/4 teaspoon basil 2 teaspoons sugar 2 packages(l/4 oz. each) gelatin 1/2 cup water 1 cup heavy cream Puree tomatoes using fruit/vege table strainer. wit, Worcestershire sauce, pepper, chervil, basil, and sugar and set aside. Sprinkle gelatin over water; let stand 5 minutes to soften. Completely dissolve gelatin over hot water. Add dissolved gelatin to tomato mixture and mix well. Chill mixture until partially set. Add cream to mixer bowl and whip until stiff. Fold tomato mixture into whipped cream and pour into an oiled 4-cup mold. Refrigerate until set. When ready to serve, unmold onto serving platter. Yield: 6 to 8 servings.
