The skis are in the closet, winter clothes are packed away and you’ve got summer on your mind: white beaches, frozen desserts and that first long, lazy day of hot sunshine. The days are getting longer and warmer and the pleasures of summer are so invitingly close! You can increase the pleasures of the season by serving refreshing meals that are easy to prepare and require little or no cooking. Remember, every minute out of the kitchen could be spent sitting in the backyard sun with special friends. One of the best sources for cool cooking is probably in your kitchen right now: Peanut Butter! America’s favorite sandwich spread is as versatile as the peanut itself in delicious entrees and desserts. Peanut butter pleases both kids and adults who have always loved its nutty flavor and smooth texture as a spread or in desserts. With warm weather on its way, let your imagination run so you can enjoy its great taste and good nutrition in everything from cool appetizers to barbecued entrees to no-cook desserts. There’s a whole summer menu in that little Jar in your cupboard. Peanut butter is a healthy choice for all types of meals. It’s cholesterol-free, low in sodium and saturated fat and has more protein than an equal serving of lean red meat. The following recipes feature the natural goodness of peanut butter in convenient and refreshing summertime meals. KABOBS (Makes 6 servings) 2 lbs. pork, lamb or chicken cut into 1-inch cubes Assorted vegetables—l red and 1 green pepper OR 2 medium zucchini Peanut Sauce of your choice (see recipes attached) Marinate pork, lamb or chicken cubes in 4 of a peanut sauce of your choice, for 1-2 hours before cooking Coat meat well Thread marinated meat onto skewers, alternating with vegetables. Oil cooking grid on grill to prevent kabobs from sticking Grill kabobs over medium charcoal 15 18 minutes or until done (Meat is done when juices run clear ) Turn frequently to prevent burning Baste kabobs with remaining sauce, if desired, during last 5 minutes of cooking time Sauce can also be used as a dipping sauce at the table
