Polynesian Pork Loin: A Feast For The Senses 3%^ - * z

Feasting. The word brings to mind visions of tables laden with sumptuous dishes of every color, flavor, and aroma. We generally reserve the big splash for holidays and special family gatherings, celebrating the occasion in a style that is both impressive and delicious. A roast or a bird is usually the centerpiece of a family feast. Polynesian Pork Loin is a dish worthy of being the main attraction of the next big meal. Basted and baked in a tantalizing sauce of tomato paste, crushed pineapple, brown sugar, and ginger that brings out all the savory flavor of pork.

POLYNESIAN PORK LOIN (Makes 4 to 6 servings) 3 1/2 to 4 pound pork 1/2 cup firmly packed loin roast brown sugar 1/4 teaspoon pepper 2 tablespoons instant 11/4 cups water minced onion 2/3 cups (6-ounce can) 2 tablespoons chopped Contadina tomato green pepper paste 2 tablespoons cider vinegar 1 cup (8-ounce can) crushed 1 teaspoon ground ginger pineapple and juice 1 tablespoon cornstarch Rub roast with pepper. Insert meat thermometer at slant in thickest part of roast; avoid touching bone Roast in slow oven (325°F.) until thermometer reads 160°F (about 2 1/2 hours). Combine / cup water, tomato paste, pineapple and juice, brown sugar, onion, green pepper, vinegar, and ginger in small saucepan. Boil gently, uncovered, 25 minutes. Stir occasionally. Combine remaining water and cornstarch; add to tomato mixture. Baste roast with sauce last 30 minutes of cooking time. Continue baking for another 30 minutes or until thermometer registers 185°F., basting twice. Heat remaining sauce and serve with pork roast.
