I thought you needed a recipe from was over here in Oregon.” Joyce’s recipe for “Seven Bean Soup” is one of hundreds entered, , evaluated and taste-tested in the harm W ife News test k.tchen.. .and was a unanimous choice among CX staffers who spent days sniffing the wonderful aromas of simmering soups drifting out of the test kitchen as they readied this issue. “Seven Bean Soup” is not onh : tasty, but attractive and colorful to look at. It's spicy, delicious and hearty enough to be used as a mam ■ course with bread and Iruit. “My husband’s a retired lumberjack,” Joyce said. “He may not work quite as hard nowadays, but his appetite is just as good—especially for Seven Bean Soup!” You won’t need a lumberjack in i the family (even a retired one!) to ; appreciate this hearty soup...try it out on your family soon' SEVEN BEAN SOUP 3 smoked ham hocks 1 pound beef soup bones 1 bay leaf 8 to 10 peppercorns 3 whole cloves 1 cup navy or small white beans 2/3 cup EACH pinto, cranberry, kidney, garbanzo, blackeyed and small lima beans ‘ 5 medium onions, chopped 2 garlic cloves, optional 5 stalks celery, sliced 1 pound 13 ounce can tomatoes 1 pound hot sausage (Italian or pizza) Use a 12-quart kettle for this recipe •|f you aren't able to obtain all the variety of dried beans, use what you are able to buy to total 5 cups dried I beans (this amount includes the navy beans) Cover ham hocks and soup bones with about 5 quarts of water Add bay leaf, peppercorns and cloves Bring to boil; reduce heat, cover and simmer for 2-I'2 hours Remove meat from bones discard fat and bones, reserve meat Add washed beans and 5 more quarts water to broth Bring to boil, reduce heat cover and simme r 2 hours or until beans are tender Meanwhile saute sausage in fry pan until browned and cooked Remove from pan slice 1/4-in thick Add vegetables meat from bones sliced sausage to simmering broth Cook 30 minutes until vegetables are tender Remove bay leaf pepperi corns and cloves
