Jaycee Roadblock Day Proclaimed Saturday, July 31 A proclamation issued last week by Town Board president. Jack W. Rizek, officially establishes Saturday, July 31, as Jaycee Roadblock Day in Walkerton. On hand for the signing of the proclamation was Jeff Zehner, chairman of the Walkerton Jaycee Roadblock. According to Zehner, “the Jaycees have pledged to help the Indiana Chapter of the Cystic Fibrosis Foundation in their dedication to escalate its research activities in the coming years, and hopefully, to stop Cystic Fibrosis.” Advancements in research and care have extended the lives of many children with Cystic Fibrosis, so much so that increasing numbers of CF patients are reaching their late teens and twenties. Another primary purpose of the Jaycee Roadblock is to help the Indiana CF Chapter support clinical care for children and young adults with CF. The specialized care that extends the lives of CF victims today is provided through 120 Cystic Fibrosis Centers staffed by medical experts in diagnosing and treating pediatric pulmonary and gastrointestinal diseases. Indiana has five such centers located so all Hoosiers have access to this comprehensive care and minimal travel. The five Indiana centers are Riley Hospital, I.U. Medical Center, Indianapolis; Children’s pavilion, Methodist Hospital. Indianapolis; Deaconess Hospital, Evansville; St. Joseph Medical Center, South Bend; and Lutheran Hospital, Fort Wayne. Through roadblock contributions, the Jaycees will also be alerting parents to the signs of Cystic Fibrosis. SCANDINAVIAN HAM SALAD 1 Dole Fresh Pineapple 2 cups cooked ham, cut into chunks 6 cherry tomatoes, halved 1 cup sliced celery 1/4 cup sliced green onions 1 /2 cup dairy sour cream 1/2 teaspoon dill weed 1/2 teaspoon hot mustard 1/4 teaspoon lemon juice 1 /8 teaspoon garlic salt 1/8 teaspoon pepper Cut pineapple in half lengthwise through crown. Remove fruit, leaving shells intact. Core and dice fruit. In a large bowl, combine pineapple, ham chunks, cherry tomatoes, celery and green onions. In a small bowl, combine all remaining ingredients for dressing, blending well. Spoon dressing over pineapple combination, tossing gently to mix. Pile salad into pineapple shells to serve. Makes 4 to 6 serving*.
