Acorn Squash with Orange Wheat Stuffing is nutritious fare that will appeal to young and old alike It’s an interesting combination of link sausages, cracked wheat and orange juice all baked in the squash. Acorn Squash With Orange Wheat Stuffing 1 small acorn squashes, 1 teaspoon dried about 3/4 pound each leaf sage 1/2 pound link sausages 11/4 cups Florida 1/2 cup chopped onion orange juice 3/4 cup c racked wheat 1/2 teaspoon salt (bulgur) Bod the squashes in a large kettle of water for 20 minutes, or until tender Brown the sausages in a skillet and transfer to a paper towel to dram Pour out all but 2 tablespoons fat. Add onion to skillet and cook 2 minutes. Add the wheat and cook . minutes longer Add the sage, orange juice and salt Cover and cook oyer low heat for 25 minutes, or until the liquid is absorbed Slice the sausages and add Cut off a 1-meh slice from the pointed ends of the squashes. Remove the seeds and fibers Cut a thin sliver from the flat ends so that the squashes stand evenly Sprmkle the ms.de of the squashes w.th a pmeh ••f sugar and w.th salt and pepper Spoon in the stuffing and arrange the squashes m a buttered baking duh Replace the lids and bake in a 3 / 5°F oven for 45 minutes Yield I servings
