FROZEN CHOCOLATE CREAM 1 envelops (1 tablespoon) ‘/a teaspoon salt unfiavored gelatin l¥i cups miniature marsh2 cups milk mallows / separated ¥2 cup California walnuts, 2 envelopes unsweetened chopped chocolate (2 ounces) ¥2 pint heavy cream, ¥2 cup sugar whipped Soften gelatin in '4 cup milk. Combine rest of milk, egg yolk, chocolate, sugar, and salt in the top of a double boiler. Cook until slightly thickened, stirring constantly. Add softened gelatin and stir until dissolved. Cool. Fold in marshmallows, walnuts, whipped cream, and beaten egg white. Pour into refrigerator freezer trays or paper cups in cupcake pans. Freeze until firm. L’nmold or slice, can be served topped with whipped cream. Use 15 molds or 2 refrigerator trays. PINEAPPLE CHEESE SQUARES I package lemon pudding and I pound cottage cheese, sieved pie filling mix ¥s cup drained canned crushed ¥e cup sugar pineapple cup water 6 honey maid graham crackI egg. unbeaten ers, finely crushed ? » cup light cream Combine pudding mix, sugar, and % cup of the water in saucepan. Add egg and blend well. I hen add cream and remaining ‘4 cup water. Cook and stir until mixture comes to a full boil and is thickened about 5 minutes. Remove from heat. Cool only about 5 minutes, stirring once or twice. Fold in sieved cottage cheese and pineapple, blending well. Sprinkle half of the graham cracker < numbs in bottom of ♦x ♦x2-inch pan or ’Oxfemch pan. Pour lemon mixture over crumbs Sprinkle with remaining crumbs Chill. Cut in squares. Makr» H servings

BANANA REFRIGERATOR CHEESE CAKE 1 envelope (I tablespoon) 1 tablespoon lemon juice unflavored gelatine % teaspoon salt ¥2 cup cold water 2 egg whites, stiffly beaten 2 egg yolks, slightly beaten % cup heavy cream, whipped % cup sugar 2 fully ripe bananas 1 cup (¥2 pound) cream Crumb Crust cheese or creamed cottage cheese Soften gelatine in % cup cold water. Mix together egg yolk sugar and remaining water in top of double boiler. Ckxik ov hot, not boiling, water until thickened. Remove from heat. St in gelatine. Whip cheese until smooth and creamy. Gradual! add egg yolk mixture, lemon juice and salt, beating until we blended. Chill until partially set. Beat thoroughly. Fold in eg whites, then whipp'd cream. Perl and slice bananas. To proven from browning, coat with ascorbic acid mixture. Arrange alter nate layers of cheese mixture and sliced bananas on Crumb Crust using cheese mixture for bottom and top layers. Top with 14 cu[ crumbs reserved from Crumb Crust recipe. Chill until firm (ap proximately 116 hours). Just before serving, garnish with addi tional rip* banana slices, if desired. Makes 1 (9-inch) cake. 8-1' servings. Crumb Crust H cup melted margarine /% cups finely crushed hon< 3 tablespoons sugar maid graham crackers I teaspoon ground cinnamon Add margarine, sugar and cinnamon to crumbs. Mix tlx” oughly. Press ’4 of crumb mixtun- firmly along sides and hot ton of a 9-inch spring form pan. (A spring form pan is a round hak ing tin from which the sides can be removed, to allow for srrs ing the cake from the bottom of the pan.) Reserve romainini cnimbs for sprinkling on top of cake. NO I E: If desired, this recipe may be made using a 9-inch cak or pie pan in place of a spring form pan.
