■ What Fun! A Jellied Vegetable Salad That's a Pie A. JR -. * wk. This Jellied Vegetable Salad is jellied In a pie plate. It looks like pie. Cuts down in sleek wedges like pie. But the zesty taste is all its own . . . crisp, crunchy raw vegetables captured in snappily seasoned jelly that’s “frosted” with cottage cheese. The actual jelly itself is canned apple sauce firmed with lime gelatin, flashed with lemon juice. Makes an appletangy base with plenty of zing for the vegetables. In serving, place a nice big wedge on each individual plate, flanking it with greens. Most inviting, especially for a meal on a warm day. And all wonderfully easy to do. 1 package lime flavored 2 cups finely shredded gelatin cabbage 1 envelope plain gelatin 3 tablespoons chopped I*2 cups boiling water pimiento y 3 cup lemon juice 2 cups cottage cheese 2 cups canned apple sauce 1 teaspoon grated lemon 1 cup diced celery rind 1 cup grated carrot Salt and pepper io taste J. 4 cup chopped green pepper Saiad greens Thoroughly mix the flavored and unflavored gelatins; add boiling water and stir until dissolved. Stir in lemon juice and apple sauce; chill until thickened. Stir prepared vegetables into thickened apple sauce mixture and turn into a lightly oiled 9" pie plate. Chill until firm. When ready to serve, use a small spatula to loosen pie all around edge; dip pie plate in warm water and invert on plate. Shake to loosen and remove pie plate. Turn right side up on serving plate. Mix cottage cheese, lemon rind and seasoning to taste. Spread cottage cheese over top of pie. If d-sin 1, garni 1 with parsley, carrot curls, etc. Cut in wedge.; and rerve with salad greens. Makes 6 luncheon servings or 8 salad servings.
