From the Northern Farmee. Agricultural Fairs. The season of the great agricultural fairs is rapidly approaching. Many a farmer is now doing his best to improve the condition of his favorite stock; many a farmer's wife is preparing arti cles in her deoartment which, if - m they do not carry ofl tho prize from ull competitors, will at least be creditable to her skill, and industry, and taste. Many a gardener is taxing all his resources to perfect his specimens of beets, squashes, melons, beans, potatoes, grapes, apples, pears, peaches, and what not. Tho florist is trying his skill many a lady amateur is trying her skill in bring ing out all the latest beauties of Sip flowers, which will charm all beholders, and give the highest finish and grace to the exhibitions, even if they do not earn golden rewards. We re.oice m those trrcat annual gatherings. They stimulate the industry and taste of the n ral DODulation. lhev altord a or pleasant holiday to hard working men. They bring together those who would not otherwise become acquainted with each other, and while new acquaintances torm ,i . cl, much information is given and received on subjects most in teresting to the agricultural pop ulation Wo wish, however, to make a suggestion or two in this place It seems to us that our fairs might be more practically useful. For instance, there should be not on ly exhibitions ot the finest prod ucts of the farm aud garden, but there should also be some arrang ment for giving some information respecting these products. A lew years ago, we noticed at one of our Fairs, a fine collection of grapes. But wo could not find out the owners, nor the names of the varieties. Now, what we should like in such a case, would bo to have a card attached to each variety, giving its name, quality where plants could be obtained and at what price, &o. Or, let the owner, or some one deputied by him, be at hand, and give whatever information should bo desired. And so of all objects o all objects of interest at the Fair. Many people who attend these exhibitions go not merely to be amused as children are with toys, but to gain valuablo information. Sinco writing the last sentence, we have hesitated a while, in doubt whether to speak of another mattor which has lain our mind for a year past. We dread to oflend the ladies, but we must run tho risk. Wo refer to the introduction of female horsemanship into our Fairs is it on the whole a good thing? It attracts a crowd into tho show ground, no doubt, and helps pay expenses. But is the curiosity thus excited always laudable? Is the crowd thus attracted, composod of such persons as our modest ladies would wish to associate with? Does not this practice place the lady riders almost on tho level with the female riders of a circus? We are always pleased to see tho ladies taking horseback rides at home, in the company of each other, or attended by a gentleman. The exercise promotes bodily vigor, and beauty, and cheerfulness. But we are not plcnsed to seo tbom exhibiting themselves at a show, surrounded by a crowd of gaping thousands. Perhaps we cannot better coucludo our article than by quoting a few passages from an address by Daniel Webster, beforo au Agri cultural Fair in Massachusetts, in tho year 1840. He said: "The principle of association the practice of bringing men together bent on the same general end, uniting their intellectual and their physical efforts to that purpose is a great improvement in the present age. Wo saw it years ago perhaps I might say centuries ago. It began in the professional associations of tho world in the legal, the medical, and tho theological. But it was long in thai country und in this, before the pminplo of combination came to be aoted upou in the great system of Agriculture, before it was brought to that pursuit of 'ifo belbre Agriculturists were brought to act in unison. And tho reason is obvious. In the city, immunities strive together. The merchants and shipowners can come together at the sound of a MI Tho mechanics, generally, living in populous places, way do tho same. They have tho opp i Mhity of interchan
ging sentiments every hour, and
what one knows, all know, and what is the experience of one, all soon become acquainted with. Hut the agricultural population is Mattered over all tho fields of he country. Their labors and beir toils are in some degree isoated. They are in the midst of the hills and the valleys and in the recesses of every solitary forest. There is no 'Change for them to assemble upon at noon. There are no coffee houses, there i a aro no Atheneums lor them to meet at in the evening and con verse on their interest. It has therefore become essen tial to the best interests of the ärmere of the commonwealth that these annual fairs should be established, and that they should be universally attended. And, t a as his excellency, the governor, has remarked, it is not so much on account of what is to be learn ed by tho most eloquent discourse in tho public houses, or at these establishments, as from tho meeting of men together who have the same general object, who wish for improvements in the same gen eral pursuits of life, that they may converse with one another that they may compare with each other their experience, and that thev mav keeD ud a constant m w o communication. It is in this point of view, in this greatly prac ticable point of view, that these annual fairs aro of importance. Why gentlcme-., every man obtains a very great portion of what he knows in this world by conversation. Conversation intercourse with other minds, is the general source of most of our knowledge. Books do some thing, but every man has not the opportunity to rend. It is conversation that improves. If any one of us here to-day, learned or un earned, should deduct what he has learned by conversation from what he knows, he would find but little lelt, and that little not of the most valuable kind. It is conversation it is the mectiug of men face to face, and talking over what they have common in interest it is this intercourse that makesmen sharp, intelligent, ready to communicate to others, and ready to receive intimations from them; and ready to act on those only which they receive by oral communication. "Therefore, if there wero not an article on exhibition if there were not I good pair of steers, nor a fine horse, nor likely cow in tho wholo country, if there be society ladies, wives and daught ers, if there be those connected with the tillage of land, I say that these annual meotings are highly important to progress in tho art to which they refer. I come here as a poor farmer, to meet with other better farmers, ready to receive Irom them any intimations their experience may have taught aud desirous only of suggesting something for their reflection which, now or hereafter, may draw their attention, and draw it usefully to something in tho agricultural art." Liberality of Manufacturers. Messrs. Scott & Hedges, of Cincinnpti, recently presented one of their Three Cono Donblo Littlo Giant Corn Mills to tho Ohio Agricultural College in Cleveland, for the use of the leoturor in tho department of Agricultural Mechanics. Tho exhibition and trial of such implements boiore tho students in the Agricultural College will not only benefit the students greatly, but secure to the inventors and manufacturers a more general appreciation. (). Cult. Preserving Tender Raspberries. The editor of tho Ocrmantowu Telegraph, says of saving tender vines in Winter. "Willi our Orango raspberry which is tho very best variety wo over saw, though not quito hardy enough tronches wero dug from eig'it to ton inches in depth, the canes or stocks laid into them, and covered well over with throo to six inches with soil, butts and all They came out in the spring as perfect us when they wero laid down. They should bo pruned before laying down, and of courso tho vines should be also. Raspberries, blackberries, grapes, etc., can be pruned just as safely in the autumu as at any other time." How to Send Poultry to Market. My daily observation in the poultry market of this city, of tho loss sullcred by poultry raisers lor the want of n littlo cure, orelso want of proper knowledge, prompts me to offer u word, with tho hope that some abler pen will continue the subject. It is mortifying to mo to see so much good poultry sold by farmers at half price, simply because not nicely dressed. Ilult-dresscd, half-fat tened fowls will not bring half'
price. I will not attempt to describe tho best method of fatten
ing, but leaving that to others, I will say, thut only a little more fat put upon a fowl alter it is in bare passable order, will not untrequently double the value. Turkevs and ireese should be Of mm killed with great care to prevent them from bruising themselves, A very good plan is, to tie their wings, aud hang them on a pole by their legs, before cuttiug off the head. The same may be said of other fowls. All kinds of poultry should be "dry picked" if to be carried far to market, as they keep better if dressed in this way. If Raided, the water should be just below the boiling point. In any case, be careful not to tear the skin, or rub off tho outer cuticle (or outer skin) from tho legs. After being nicely picked, wash in clean, warm soap-suds, and thou "plump" them a the Jersey men call it that is, hold them in boiling water about five seconds. Draw back the skin and cut off the neck bone near the body, and then draw the skin over again and tie it tightly with string. This keeps tho blood from running over and disfiguring the bodies When the animal heat is en tirely gone, pack them in boxes of about 200 lbs., using clean rye straw, as this is less healing lhan ST SaaF other kinds. A little attention to these hints will materially in crease the price ami and givo greater satisfaction to the producer, seller and consumer. ";". :wi.
