THE VALLEY FARMER-DEVOTED TO THE TRUE INTEREST OF FARMERS, MECHANICS, AND WORKING MEN.
VALLEY FARMER.
From the Ohio Cultivator. Chemical view of the Corn and Cob Question. DTI' I. WATSE.f CHEMIST. The use of com and cob, and their nutricioos value, is a subject upon which much has been written of late, and various opinions entertained as to their value by agriculturists and stock growers. The most contradictory statements concerning their use have been published in the various agricultural journals, but no positive test by a judicious and careful observer seems yet to have been made, which perhaps would be the best mode of determining this vexed question. I have seen no analysis of the proximate principles of this sub stance, made with the view of settling this point. An analysis of the ash has been made, I believe, but I have not had tho pleasure of seeing it. And au analysis would not settle the point as well as the above mentioned prac tical test I have been makiug some examinations of the constituents of the cob, and find in it no starch, a small portion of gum, nsiuand fitty matters, in all aOout fifteen per cent of the cob, the remainder is lignin, collulore, rj medullin, which three substances are identical in their ultimate analysis with starch, and contain each 12 equivalents oi carbon, 10 of hydrogen and 10 of oxygen, thus: Carbon. Oxygen Hydrogen Starch. IS 10 lü Lifirnin. 12 10 10 Collulore, 12 10 10 Medullin. IS 10 10 Sui;r, 12 10 10 One more equivalent, water, nnkiuL' it 12 ot carbon, 11 of hydrogen, and 10 of oxygen. Now, it seems to me that the nutrici'His value of the cob depends not entirely upon the 15 per cent of matter soluble in the various menstrua during tho anal ysis, but unon the conversion of j r t the lignin, collulore and medullin, by the action of the digestive or gans, into a soluble, starchy substance, which is not a very extravagant stretch of the imagination to suppose that such is the case, and practical results in a different manner tend to prove tho correctness of the supposition. For instance, a distiller mentions that by the use of the corn and cob, ho was able to produce a much larger amount of whiskey than with the corn without tho cob; and wo learn that a French chemist from lignin alone, by a chemical process, has obtained an alcoholic liquid, and is at the present moment prosecuting his discovery, with tho view of obtaining alcohol from wood saw dust 18 an articlo of commerce. And our own country man, Beni. Frank I'm, found that sawdust pudding was nutritious and easily diges ted From the above, it may be seen that lignin, ect., is capable of yielding by fermentation, alcohol, which lignin, before it yields aloohol, must first become convertible into a starchy substance, then into sugar, and lastly into alcohol. The process of digestion is some what analagous, and by the proCess the constituents of the cob may be con verted into a starchy substance and assimilated. And in conclusion, I must say that it is by chemical analysis that the nutritious valu ot the cob is to be determined, but a practica test of the use of them, and I . r4it the duty ofagricul turits to test the matter pract ically, throwing all prejudices aside, and saving further discussi .us by this test, whether they are of any practical value, or not. ! might be further said, that upou a practical test of cob alone it should not be found to be wha is claimed of it, a proper propor tioa of it with the corn would be found beneficial, particularly to j i ung animals, where fat alone is not the object. Lorn contains less nitrogen in the form of gluten than any ol the cereals. Now nitrogen, in some lorm or other is necessary to the growth of an imals, l. e. the muscular tis.sue and so also are certain minera substances, such as lime, phosat .I a .a pnates, cast nine, etc ; tne cob aa contains the.tfe in a greater quan tity than the gram, aud its use would supply this deficiency, and keep the animal in a healthy growing condition, which proba bly would be the reverse upon corn alone. !orn as a food alone contains more curhon thau is necessary for the demand of some animals, particularly the horse, which carbon iu the process of di-
gestion and assimilation, must combine with oxygen, which combination produces as much heat as if the carbon was consumed or oxydized by any other process, and consequently increases the
respiration, and, over heating the t.ha animal arbipK rriirrrir: hn rnmn. died by the use of the corn and cob. Cwcihnatl, Sept., 1856. Frora the Ohio Cultirator. Planting Fruit Tree in the Fall In view of the losses sustained e bv those who Dianted trees in the fall last year, owing to the sever w m ity of the past winter, many persons feel unwilling to repeat the experiment of fall planting, al thouirh thev are aware that there wx flftv tUf ma 44 44VW VUV VUUIIW 444 lilWJ V440V TT I shall acain experience such a wintor as thA naat onA. When planted early in the fall, say in Ootober, especially, it will be found that new fibrous roots have been formed before the setting in of winter, and the trees are prepared to take an early and m. A vigorous start in spring fall is also a time ot more leisure to most persons, so that this work is less likely to be negleoted or performed in a hurried manner, and furthermore, as a general rule, better trees can be procured at the nurseries in the fall, than in tho spring, owing to the rule of ufirsl come, first served. Our advice therefore is, procure your trees, if possible, in the fall, as early ns the leaves come off rea in.. j ia iL. i i.. uiiv, anu uiaui nie naruy miim, n'flnr.ifl L, r.,.,m nlhnm,

A few-rdays ago we met a man from Alabama, who gave us a piece of information in regard to ascertaining the age of a horse after he or she had passed the ninth year, which was new to us, and will be, we are sure, to most of our subscribers. It is this: after tho horse is nine years old, a wrinkle comes on tho eyelid, at the upper corner of the lower lid, and every year thereafter, he has one well-defined wrinkle for each year over nine, If, for instance, a horse has three wrinkles, he is twelve; if lour, he is thirteen. Addjthc i number of wrinkles to nine, and you have his age. says the gentleman; and he confident it will never fail. So 18 As a good many people have horses over.ninc. it is easily tried. If true, the horse dentist will have to give up his trade Southern riantcr.
