Millers find it economical to use large stones in grinding; but large atones injure the quality of the flour. No mill-stono should be over three feet in diameter, flour from such a stone will make more and better bread than flour made from a 5 foot stone; so that 1 00 lbs. of winter wheat ground with three foot stones, and baked v..- - ' uj gur uei, w.u. , drags and chemicals at present used, will make 170 lbs. of good bread. 100 lbs of the same deflout lked as women ris hr a Blt rhAt lomiliac will melra I 4 - bake for their families will make 140 lbs. of good bread. 100 lbs. of bad flour, baked as women bake for their families, will make 100 lbs. of pretty good bread. By bad flour I do not mean flour which has received any damage from heat or damp, or from any other cause; but I mean sound spring wheat, nicely and finely ground, with large stones, 5 feet or more in diameter flour that almost any one except master bakers, would pronounce to be "sroeifine, A. No. 1." One pound of dough, if baked m an oven, in pans, will make one pound of bread; nice large sweet of nutritious qualifications, use-1 ful principally as a kind of vehi cle to transport butter into the human stomach. One pound of dough baked on tho brjeks in the bottom of the oven will lose 2 or 3 ounces in weight in baking, and will not look so nice, but it will be sixty per cent moro nutri tious than thi same amount of dough baked in the pan. This statement in relation to baking in pans and on the bottom of the oven may seem incredible to most people, und I would advise all persons not to believe what I have stated until they choose to try the experiment themselves. la the annv we have issued to us every morning sixteen ounces of bread; those that got their rations in pan bread would eat it all for their breakfast, and hardly be able to know what had become of it; while those that got their ration of oven bottom baked bread would have enough for breakfast, dinner, and some times a little for supper. If good flour in barrels be stored in the same room with barrels of salt or salted provisions, in warm weather, in three or four weeks the flour will become sour, but if it then be taken into a dry building where there is no salt or salted stores, the flour will become regenerated and will make good bread. When the flour is dry and not musty, and a baker wishes to judge of its quality in his own shop, he squeezes a handful of it tight, and if, on opening it, the flour retains tho shape of the hand and fingers, it is a sign that it possesses the good qualities I have mentioned above; if it crumble down on opening the hand, it will not make as much nor as good bread. When a baker is inspecting flour, not in his own shop, or in the presence of outsiders, he takes a handful carelessly, squeezes it tight, and then throws it back into the barrel; if the lump keeps its shape, or breaks only into two or three pieces, he will buy it; if, on the contrary, it goes into fine powder, he will not have it, because it will not make much nor good bread. It is unorganized. It is not even a positive thing, bnt is formed negatively, by tbe withdrawal of heat from moisture. It forms in silence and in the obscurity of the radiant ether far above eyesight or hand reach. It starts earthward to thin, so filmy and unsubstantial, that gravitation itself is at a loss to know bow to get a hold upoft it Therefore it comes down with a wavering motion, half attracted and half let alone. There is lury and spite in the atmosphere. It pelts you, and searches you in every tbld and seam in your garments. It comes without search warrant through every crack and crevice of your house. It penetrates the whole engine, is sucked up in the draft, whirls in sheets in the engine room; torments the cumbered wheels, clogs the joints, and packing down under the drivers it fairly lifts the ponderous engine off from its feet and strands it across tho track! Well done, snow ! That was a notable victor'! Thou mayest well consent now to yield to scraper and snow plow. In a few weeks another silent force comes forth. And a noiseless battle will ensue, in which this now victorious army of flakes shall be itself vanquished. A rain drop is stronger than a snowflake. One by one the armed drops will dissolve the crystals and let forth the spirits imprisoned in them. Descending quickly into the earth, the drops shall search the roots, and give their breasts to the myriad mouths. The bud shall open its eye. The leaf shall lift up its head. The grass shall wave its spear, and the forests hang out their banners. How significant is this silent, gradual, but irresistible power of rain and snow, of moral truths yi this world! Mr. Miner, Sir: Having roud in several agricultural papers, various plans for keeping scions, all (lifl'cri -lit from the one I practice, I thought proper to communicate my plan to tho public through the columns of your valuable paper. The plan is as follows, viz.: After cutting the scions from the tree, which I do iu February or March, I cut off the butts square with a sharp knife; I then tie them up in small bunches with a soft string, tying a small piece of leather to each bunch, on which I write the name of tho variety with ink; I Ihon tie several of these bunches together in une bundle; 1 then take them bite the cellar and raise them up and let them fall two or three times on a board or plank to even the hutts, ami then set the bundles with the butts downwards on the groiuul in a moist place, but not in the water. Here I let them stand until I want to use them. All that touch the ground keep per-! fectly well; those that do not, generally wither and die. As it is very necessary to have ail the butts touch the ground, I think it advisable to take the bunches once a fortnight and even them on a board or some even surface.
