PUTTING DOWN BUTTER. When butter is designed for keeping a number of months, it is of the highest degree of importance that it should be worked free from all remains of buttermilk. Pure Butter is an oil which will keep equally as well as lard or tallow. Buttermilk, on the contrary. contains casein, a nitrogenous compound, which decays very soon when in contact with the air.
