r Liquor Law, and Farming Interests. Mr. Editor: It is nil ty those who think the y know, that tho operation of tho Indiana Liquor Law will reduce the prico of corn considerably. Some are trying upon thi ground to prejudice the farmer agaimt it. A a producer I hare examined this question recently and am convinced that "that do will not Ita." I will present the figures and if any one can draw a different conclusion, I will be glad if tuch'a one will present tho same to tho publio upon tho figures and not upon tho mete assertion of a politician. In the coaopcndcnco of the U S, census fo? 1830, we find that the total amount of corn produced in tho U S, for that year was 602,071,104. .Total amount dlstillod 1 1 ,0G7,7G 1 Making 1 bushel distilled to erery produced. In Indiana for the toao year wcro produced 62,00 1.3G3 Wer distilled In Indiana 1,417,000 or 1 bushel In ercry 37. Then throwing away tho computation for tho entire United States and supposing that Indiana must' consume all of her own corn, wo find that tho distilleries only consume 1 ha, while 37 tue otLerwu consumed. Destroy the distilleries altogether, and you destroy tho market for every 37 th bu, of corn or suppose that corn is 37 cents a bu, which ja raroly tho case. and that the farmer is compelled to a los entirely the amount for which tho distillery would furnish a market, ho in that ease looses tho 37th. part of hU prico or 1 eent on tho bushel. Now to arnro at this loss of 1 cent on tho bushel, corn roust bo 37 cents a bushel, and we must suppc so that there would bo no demand whatever for the corn which the distiller consumes. Thitfhoworer is not correet for the distiller produces pork with the com which he distill, some say as mach as though the corn was not dis- . tilled tho least say one half as much. Then ityhe distilleries ceaso their work there must bo ft demand for at least one half their corn to produce the hogs whichthcythave formerly furnUhed the markets. This leares only the loss of 5 mills per bushel upon the extreme presumption that thero could be no market found either at homo or abroad lor tnc remaining one-half of the corn, which the distiller formerly bought. In Indiana thero wcro mailqj during tho same year, 4,472,074 gal lon of wLieky. Follow that whisly to market follow it into Tillages and towns and cities seo it going, under tho protection of law, into the abodes of want and partial starvation, par alyzing tho arm of industry and bra tabling tho "imago of Clod," and can any honest farmer suppose that if that whiskr had not . been mado if tho corn which produced it was awaiting, a market, and the thousand; of hus bands and fathers who are now lost to their families went providing bread for 'these households, I say, can any one fail to conclude that, if destitute families were thus provided for, tho surplus corn would bo demanded. Or'injother words docsjnot SJJgallons of whisky used in a family, keep out of that family ordinarily bushel of corn meal. If that be true I have the market for all tho corn that tho distil ler boucht and hundreds of homes made happy. Nov all this is without one hard word against tho distiller or tho liquor seller. Nor have I taken at all into the account the tax which the farmer pays on account of drunkenness in the land. But we have all the time had a better market for our corn at homo than the distilleries furnished, and I have the testimony. I once saw a series of experiments of producing pork from corn in the Ohio Cultivator, I have not that paper at command now, but if any one desires the corrcc'ucss o what I report tho paper can bo ob tained. The experiments prove that by careful feeding ono pound of pork . could be produced frost 3 lbs of corn The most careless feeding yielded l lb of pork to 5 lbs of corn. According to thesn I as! calculations one bushe oi corn would make 1 1 J lbs of pork, which at 4 ecnts a lb would make the corn pay 44 cts. per bushel, a price "which distillers hare not paid usjoftcn, I hare another caso illustrated of tha same view of this subject. Mr Isaiah Scobey of Springfield Township of this county has kindly furnished me with the result of two experiments made by himself with the view of as certaining where he could find the best market for his corn. ine louowinir the interesting result of. his first ex penmcnt. Bailed Indian Pudding. Take ono tea-cup nf molas-os, a pieco of suet tho sizo of two eggs chopped fine, 8 spoonsfull of meal, scald tho meal with bouiii: water or milk, mix it q'iito thin; when nearly cold add four egg- well beaten, lloil three hour In strong cloth.
