A Good Recipe lo Cure Meat. At this time of year when "hog killin''' is going on every day, the farmer begins to look through the bureau drawers, the machine box and his pockets for the clipping taken from a paper last spring, which tells how lo cure hams and bacon the "'best way." It is at this time that this recipe, said to be a good one, will be appreciated: '"To 1,000 pounds of meat take the following: Forty pounds of common salt, 10 pounds of New Orleans sugar, 4 pounds of black pepper. 1 pound salt-petre and onehalf pound cayenne pepper. Weigh the meat and take such part of the ingredients as that is a part of 1,000. Let the meat cool thoroughly. After mixing the ingredients, onehalf of the amount should be thoroughly rubbed into the meat. Put the meat in a dry, cool place. Let it. remain two weeks, I lien rub on the remainder of the cure and let it lie about six weeks, when it is ready to hang. It is important that the meat be well rubbed each time the cure is applied, and that plenty of the cure be forced into the hock end and around the .joints. Less cure should be used on the thin sides than on the joints. The heavier and fatter the meat, the longer the time required for curing. While in general, a light strawcolor should indicate sufficient smoking, it is always safe to try a piece of thin bacon or shoulder to be certain I hat the process has been carried far enough to give the 18.901 proper flavor and cure. Smoking 3.00'should be done slowly. It should 18.001 occupy four to six weeks, a little 9.00 every day. and with little heat.
