Another Royal Suggestion MUFFINS and COFFEE CAKE From the New Royal Cook Book
Breakfast is too often eaten as a duty rather than a joy. The Royal Educational Department presents here some breakfast dishes that will stimulate the most critical appetite. Muffins S cups flour S teaspoons Royal Baking Powder * 1 tablespoon sugar U teaspoon salt > 1 cup milk 1 eggs 1 tablespoon shortening Sift together, flour, baking powder, sugar and salt; add milk, well-beat-en eggs and melted shortening; mix well. Grease muffin tins and put two tablespoons of batter into each. Bake to hot even SO to X minutes. Coffee Cake S cups flour U teaspoon salt i tablespoons sugar 4 teaspoons Royal Baking POwder 1 tablespoons shortening % cto milk Mix and sift dry ingredients; add melted shortening and enough milk to make very stiff batter. Spread %-lnch thick in greased pan; add top mixture. Bake about 80 minutes in moderate oven. Top Mixture S tablespoons flour 1 tablespoon cinnamon 3 tablespoons sugar I tablespoons shortening Mix dry ingredients; rub to shortening and spread thickly over top or dough before baking.
