Horseflesh as Food.
Horseflesh as food was introduced into Gaul when the country was invaded by the Franks after the com quest by Julius Caesar. A police reg* ulation drawn up in 1404 shews that it was eaten in Paris at that time. At the siege of Paris in 1590 the flesh of asses was held in high regard. Daring the siege of La Rochelle to 1628 the Protestants by eating their horses sought to prolong their resistance against Richelieu. During the revolution, too, hk>rse' flesh was largely used and at the aieg ยป of Genoa in 1800 when Massena with stood the Austrians for several months a quarter of a pound; of horseflesh formed part of the daily rations of each French soldier, while the officers were allowed * pound each. ~ -
