Apples May Be Served In So Many Ways That It Will Be Long Before They Pall. Apples served raw should be ripe. Vt they have come from the market they should be washed before being served. , Pared and sliced apples may be kept from discoloring by putting them into a salt solution, one level tablespoonful of salt to three pints of cold water. Fine-flavored, fresh apples are not Improved in cooking by the use of cinnamon or other condiments. To make “bird’s nest,” fill a pie tin which has perpendicular sides, with apples cored and cut into eighths. Add a very little water, cover with a biscuit crust, and bake 25 minutes, or until the apples are tender. When baked, turn the crust side down on a large platter, sprinkle with sugar and serve with cream. ' ' . ■; For apple sauce, prepare apples as for bird’s nest, place in an acid-proof saucepan with a small amount of wTater and cook until tender but not mushy. Add small amount of sugar, continue the cooking for a minute or two, and then remove and allow to j cool.

Cork tightly and keep away from the face, says the Scientific American. Dissolve one bar of naphtha soap in three gallons hot water, add one-half teaspoonful each of /baking soda, salt and alum and three tablespoonfuls of the ammonia-chloroform-ether mixture. i ' . ___ To clean oriental or other rugs to their original brightness make a lather and dip a brush in it, shaking out superfluous water. Go over the'‘rug with this brush and the lather dries out almost immediately. No harm whatever is done to the best oriental rug. TO sponge spots from clothing, even delicate silk, and upholstery, dip a soft sponge in the lather, wring as dry as possible and sponge off the spot. To wash sweaters, blankets or other flannels let the mixture become nearly cold, soak the garments in it half an hour or less, squeeze dry, rinse in clear water, squeeze dry and hang up. The various ingredients used not only remove grease and dirt but set and brighten colors.
Boiled Potatoes With Onion Sauce.
, Boiled potatoes in their jackets with bacon and onion sauce. The potatoes are cooked soft in boiling water and sent to table smoking hot, still in their skins, with a bit of salt sprinkled over them. Each person peels his own potato and eats it with this sauce. Get half a pound of smoked bacon, not too fat, remove the rind and chop into small dice; fry until they begin to crisp, then add an equal amount of chopped onion, mix and cook slowly, stirring occasionally until the onion is a fine yellow color, but not to blacken. Serve hot in gravy boat. It has a delicious flavor and is not as indigestible as it sounds.
Cocoa Cake.
Here is a very inexpensive cake which is original with me. It is very moist, and never faift. Put into your sieve one cupful sugar, one and onehalf cupfuls flour, two, level teaspoonfuls. baking powder (or one-half teaspoonful soda, one teaspoonful cream of tartar), one teaspoonful cinnamon, one-half teaspoonful cloves, one-half teaspoonful salt. Sift all this into your mixing bowl. Break in one egg. Add three tablespoonfuls melted butter, also two-thirds cupful warm water (not boiling) and a teaspoonful vanilla. Beat well. Bake rather slowly. Frost when cool with white frosting.

Homemade pistachio flavor is made In the following way: Tie in muslins handful ot bruised peach leaves, cover with either water or milk, and let stand to absorb the flavor. Either milk or water in quantity to use in the cake or dish wish flavored.,

Bleached canton flannel is used to make these handy knife and fork cases. Bind them with blue ribbon and use th£ same ribbon for tying the! cases when rolled up. Stitch places for a dozen knives. The outline "Knives’’ and "Forks" may be done In blue also on the cases. A case like this weff add much to the tidiness of buffet drawers.

Take nice, fresh, crisp carrots, scrape and put through a food chopper. using the coarse knife. To each fint of carrots add two tablespoonfuls. melted butter, one teaspoonful sugar and -salt to taste.

WESTERN CANADA’S GREAT HARVEST
Decidedly Encouraging From Every Standpoint. ± Speaking of conditions generally In Canada, tbe most encouraging feature of the year, from a trade and financial standpoint, has been the bountiful harvest of the Northwest, where a greatly-Increased area under cultiva tlon'has given the highest average yield in the history of the country. It -te* estimated that, the grain crop of Manitoba, Saskatchewan and Alberta has a market value to the producers of approximately four hundred million dollars, in the use of which we may anticipate not only the liquidation of much indebtedness, but the stimulation of current trade. The annual reports of the various banks throughout Canada are now be ing published. They savor of opti mism all the way through,--and, contrary to what might be generally expected in war times, business is good everywhere. The General Manager of the Bank of Montreal at the recent annual meet ing said: “The position of Canada is a highly favored one, with an assured future of growth, development and general prosperity." In the same report it is said that the Canadian West “has recovered to a marked extent frorf the economic dis location of a year The season’s wheat and other cereal crops have exceeded all previous rec ords in quantity and quality, and, despite the enormous yield, prices have been uncommonly well maintained. It would be difficult to exaggerate the importance of these results to the Prairie Provinces —and the Dominion at large. The prosperity of those engaged In mixed farming and ranching is most encouraging. The flour mills in Manitoba. Sas katchewan and Alberta are busy and are doing well. Their combined daily capacity is about 27,000 barrels. The large advances of the Dominion Government to farmers in certain districts, principally in the form of seed, were made very opportunely and have been amply justified by the very large crop yield in those districts. . Business in many important lines is good and should continue to improve as returns from grain yet to be marketed are received. The general business outlook, has been transformed by the large crop. The returns of the gross earnings of Canadian railroads for November show those of the Canadian Pacific in creased $1,796,000 or 78 per cent for the last nine days of the month. Com pared with same month year ago, increase no less than $5,291,000 or 67.6 per cent against a 45 per cent gain in October, and a decrease of 4% per cent in September. H. V. Meredith, of the Bank of Monteal. in a receht'address delivered at Montreal, declared that the most encouraging feature from a trade and finance standpoint had been the bountiful harvest of the Northwest, where the greatly increased area under cultivation had given the highest average in history of the country. He esti mated the grain crop of the three provinces at a value of over $400,000,000, and said that such remarkable results would have the effect of attracting tbe tide of immigration to our shores, whemthe world is again at peace. The restoration of a favorable balance in our foreign trade is a factor of supreme importance at the present time. It is the general opinion in the East that the 1915 grain crop in the Prairie Provinces not only put the whole Dominion in a sounder trade and flnan cial standing, but that it will also result in a big increase in immigration to the West of agricultural settlers, who will include capitalised farmers from Europe and the United States as well as homesteaders —Advertisement

The moment he took notice of it "the proprietor, a stout, prosaic looking man, whom no one would have suspected of sentiment, stepped toward the picture, clasped his hands iri pathetic gesture, and with a faraway look in his eyes, stood for a time in rapt admiration of the great Philhellene.”
War Spares the De Reszkes.
Jean de Reszke has written to a friend in this city he has news from his native Poland to the effect that his properties have not suffered very much from the war and In their province complete calm reign's. He says that while his brother Edouard has suffered from rheumatism he is how beginning to mend. He also wishes to thank his American friends for tbeir interest and sympathy, and adds that he has resugned his teaching of singing in Paris.
