Fruit Sherbet.
The juice of two oranges, two lemons, a pint of cream and a cupful of sugar sirup (or less, depending upon the fruit). Strain the juice and add the cream and sirup, then freeze. > , ' The proportion of ice and salt for ice cream is one part salt to three of ice. , For ices and sherbets use one part salt to four parts of ice. For packing use one part of salt to four parts of ice. Use a gunnysack and a heavy mallet to crush the ice.
