Potatoes a la Milanese.

Take as many potatoes as are re* quired. Choose large ones, bake them till soft, then cut off the tops and scoop but the insides. Rub the potato through a sieve and add a tablespoonful of grated cheese, pepper and salt Mety one ounce of butter in a stewpan. stir in the potatoes and make it hot, then fill the cases with it and put them in the oven fpr a few minutes.
