Sweetbreads and Mushrooms.
Take one pound of fresh mushrooms, peel and use the tops only—• the stems may be used in soup. Fry to a delicate brown in butter, seasoned with pepper and salt. Have ready a pair of sweetbreads that bdvd been parboiled and blanched; dice and mix with the mushrooms. Make baskets of good pastry, shaping over patty pans; fill them with the mixture, sprinkling a little grated chpese on top and pinching on the handle. Bake 15 minutes, serve on a dolly and garnish with a spray of fresh cress. .
