Green Corn Fritters.

Score the kernels lengthwise with a sharp knife, then with a dull edge press out enough pulp to make one cupful. Add the beaten yolks of two eggs, one-eighth of a teaspoonful of pepper, a dash of cayenne, one-third of a teaspoonful of salt, one scant cupful of pastry flour, mixed and sifted with one rounded teaspoonful of baking powder and finally fold in the stiffly beaten whites. Drop from a spoon in deep hot fat, fry until brown, and drain on brown paper before serving.
