Spare Ribs With Sweet Potatoes.

Boil, then pare sweet potatoes. Sear son nice even-sized sections of fresh spare ribs and cut into three or four rib sections. Bake the ribs in a covpan until almost done, then run the sweet potatoes through a ricer, forming a nice high ridge on the hollow side of each rib portion. Return to oven and cook long enough to finish the ribs and slightly. brown the potatoes. When serving, dust each portion with salt and pepper aid dot with bits of.butter. Another way is to partly boil, then pare and slice the potatoes, surround the meat with these half an hour before it is done.
