SKIN SHOULD REMAIN
MANY COOKS MAKE MISTAKE X PREPARING RHUBARB. To Have the Product at Its Beet, the Outer Covering Must Be Retained —When It Is In Best Condition for Pies. Thousands of cooks and housewives are in the dark as to the proper method of preparing and cooking that much-beloved vegetable rhubarb, which comes so near being a fruit. Our mothers usually pulled the stalks, cut off the leaves and took a knife and stripped off the skin in long, narrow strips before the remaining portion of the stems was cut into short pieces for cooking. The proper way is to remove the leaves, and an inch or more of the stalk next to the leaf, and then thoroughly wash and remove all that slippery matter that is on the end next to the root. If there are any rusty spots, or worm holes, those should be cut out, but all the rest of the skin should be left on the stalk, and the whole thing cut into short sections and cooked with the skin remaining!. ' The highly colored skin gives the cooked product a much nicer appearance, and better still there is a flavor derived from the skin that cannot be secured in any other way. Physicians say that rhubarb cooked or baked in pies or puddings is much more healthful if the skin is left on and cooked with the center of the stalks. Another important fact not generally known about rhubarb is that it is not spoiled when it wilts or withers a bit in lying about the market or the kitchen. vThe fact is when rhubarb is somewhat wilted and looks as if it were rather stale, it is nearer right for making pies than when it is just freshly pulled. Some experienced cooks will let rhubarb He about for two or three days before they use It. The reason for this is the plant is to a great part water. When prepared for food it is very juicy, and when baked in pies the most of the pies burst and allow the surplus juice to run out in the pan in which they are baked, making an unpleasant muss, and causing the pie to be ruined, so far as appearance is concerned.
Vanilla Cream Sweet Paste.
Rub into two cupfuls of pastry flour half a cupful of butter, two tablespoonfuls of granulated sugar, one egg slightly beaten, and enough very cold orange flower water or ice water to make a paste. Two tablespoonfuls of rice flour substituted for the eame amount of pastry flour makes a more delicate paste. Roll the paste rather, thin and line a mold that has been buttered with soft but not melted butter. Line the paste with buttered paper, fill with uncooked rice and bake. When ready to serve, whip one cupful of cream very stiff and fold in the stiffly beaten white of one egg and three tablespoonfuls of vanilla sugar. Make the sugar by adding to the amount of sugar as much vanilla extract as it will take up, and let it dry before using.
Apple Dainty.
Cook six apples peeled and sliced with three-fourths of a cupful of sugar and one-fourth cupful of water. Add the minced outside peel of two lemons, a epeck of salt and a tiny piece of bay leaf. When soft add half an ounce of softened gelatin and press through a sieve. Add three tablespoonfuls of lemon Juice, one tyblespoonful of butter and color It pale green with paste or liquid coloring. When cold add half a cupful of whipped cream and the whites of two eggs beaten stiff. Fill a mold of sweet' paste well baked, or pile it in a mound on a round of sponge cake, and serve surrounded with vanilla cream sweet paste; *
Spare Ribs With Sweet Potatoes.
Boil, then pare sweet potatoes. Sear son nice even-sized sections of fresh spare ribs and cut into three or four rib sections. Bake the ribs in a covpan until almost done, then run the sweet potatoes through a ricer, forming a nice high ridge on the hollow side of each rib portion. Return to oven and cook long enough to finish the ribs and slightly. brown the potatoes. When serving, dust each portion with salt and pepper aid dot with bits of.butter. Another way is to partly boil, then pare and slice the potatoes, surround the meat with these half an hour before it is done.
Spanish Potatoes.
Boil potatoes in ekins. When almost done remove from kettle and place in cold water (same as for potato salad). Remove skin from as many as required, cut up one small onion, place in baking pan, sprinkle onion, a little finely chopped parsley. Lay over them one or two thin slices of fat pork. Put very little water under; place in ovea to "book to a light brown. Serve.
Hindu Cabbage With Onions.
Cut cabbage into shreds, put it, dripping wet, into a kettle with one tablespoonful of oil or butter. Season with salt and cayenne pepper to taste. Cover closely, let cook in its own steam. Cut one large onion in small cubes, fry in one tablespoonful of oil or butter till slightly brown; then add cabbage and fry both together a fine golden brown.
