Fried Kidney.

Clean kidney and cut up. Put tablespoon of fat in frying pan, add onion to taste cut up, fry in fat until onion Is brown, then put kidney in, add salt, pepper, garlic and celery to taste. When the onion is Brown In the fat add two teaspoons of flour aud brown in fat before adding kidney, then add meat stock or water, and cook for one and one-half hours. Cook in a large frying pan with cover on until kidneys are well cooked. Just before serving add vinegar to taste if you .choose.
