Vegetarian Sausages.
One and one-half cups lima beans, two tablespoons butter, one teaspoon salt, a dash tabasco sauce. Soak the beans over night, cook them in salted water until soft, drain perfectly dry and then squeeze the pulp through a potato ricer. Beat in the butter and seasoning. If not moist enough, add one beaten egg or as much of it as required, making the paste so soft that It can be rolled into croquets. Shape like sausage, dip in beaten egg and flour, and fry in butter until brqwn.
