Seasonable Recipes That Are Worthy the Attention of Any Earnest Housewife. . Mint' Sauce —To be served with spring lamb. Three tablespoonfuls vinegar; two tablespoonfuls mint; one tablespoonful sugar; one tablespoonful salt. Mix ten minutes before using. Creamed Sauce —For planked or boiled fish. Peel, cut into halves and remove seeds from six cucumbers. Grate them and drain until perfectly dry. Add to the grated cucumber one grated onion, juice of one lemon, one-half teaspoonful of salt, pepper and fold in one-half cup of whipped cream. Serve at once. A Summer Dessert Called “Six Threes”— To be frozen: Three cupfuls of sugar, three cupfuls cream, three cupfuls water, three bananas (orushed), three oranges (juice), three lemons (juice). Marshmallow Pudding—The whites of three eggs, beaten stiff, one-half cupful cold water, one-half cupful boiling water, one cupful sugar, one tablespoonful gelatin, one teaspoonful flavoring. Soak gelatin in cold water until soft Add sugar and flavoring, then boiling water. When mixture begins to set pour over the beaten egg whites and beat constantly for 20 minutes. Then put into molds to set. Mayonnaise Dressing —One-half cupful sugar, one tablespoonful flour, mix; one-half cupful milk, three and one-half teaspoonfuls salt, threefourths cupful vinegar, balance water; one level teaspoonful mustard; three well beaten eggs; lump of butter size of an egg. When cool, add whipped cream. Potato Salad —Cut into small dices six large boiled potatoes, add two stalks celery cut into small pieces, one cucumber and one-fourth onion, minced; three hard boiled eggs, sliced; salt and pepper and juice of one lemon. Pour mayonnaise over this and mix thoroughly.
