Testing Eggs by X-ray.
The "candling” of eggs by the Roentgen ray 1b carried on with great success by an association of poultrymen which Is at present sending overJOO,000 eggs per week Into London. The apparatus Is much like the old eggcandler. where the egg Is held up to a small hole in a partition back of which Is a light and the character and age can be determined. This* operation ,1s done much more satisfactorily where the Roentgen light is made use of instead of gas or electricity. An absolutely fresh egg, when placed therein, appears perfectly transparent. Eggs which are older, even if still edible, show small spots. These are not visible to the naked eye by ordinary light, but are shown on the fluorescent screen of the apparatus quite cljarly. When such spots exceed a certain size the egg is declared unlit for food. These “examined eggs,” which ars certified by a stamp, are much sought after in the London market.
