BURNED AND ITCHED BADLY

USES FOR WASTE GREASE
Delicious Flavors Imparted to Various Articles of Food in th# . Frying Process. Those who like- delicate flavors should "try frying oysters, which have been drained and wiped, In a very hot pan of chicken grease in which a couple of bacon slices have been fried. The oysters should not be rolled In cracker crumbs or cormneal, but should be dropped in, tossed about.and taken out when tpey begin to curl. Carrots and young beets are much enhanced by being allowed to brown in a deep pot of beef grease, while bacon grease Is, of course, the recogelement in which to fry and scramble eggs. It may seem a very troublesome matter to keep all these little sepa: rate pots for grease, but when once the habit is formed and its utility recognized it will never be abandoned. And when one realizes that every day there is scraped from the dinner platter and the vegetable dishes enough grease and juices to materially add to the delectability of one’s food, the process of waste is automatically arrested. If you want to emulate the wily French cook, remember that one of grease which has - been kept in a pot by itself, and therefore has retained wholly its own flavor, will do the work of ten spoonfuls of but-ter,-and ten spoonfuls of butter is almost a pound.
TO MAKE BEEFSTEAK PIE
New Recipe for This Appetizing Dish That Is Worth the Housewife’s Attention. This recipe makes a good beefsteak pie: Take some tender steak, beat oi bruise it just a little, season with a little salt and pepper, a teaspoonful of salt 'lor a two-pound steak. Dot the surface with little knobs of butter, then dredge on a tablespoonful ol flour; roll up .and cut off unevenly Into pieces about two inches long. Put a good pie paste around the sides and bottom of baking dish, a deep pudding pan is beßt, and put in th« steak. Nearly fill the basin with wa ter, add a piece of butter on top and dredge flour over all —a teaspoouful Is enough—lay skewers across the basin, roll the top crust from half an inch to an inch thick, cut a slit in the center and pinch the dampened edges of the crusts firmly together before putting into the oven. Bake foi one hour In a quick oven. *
Haddock Fritters.
One smoked haddock, two eggs, one gill of milk, one tablespoonful of flour, salt and pepper to taste. Put the haddock into a baking tin with a little milk and place it in the oven for aboul 20 minutes. Take up and drain the fish, remove the skin and bones and divide the meat into fine flakes. Pul in a stewpan with the flour, add the milk, and beat up over the fire and mix well. All the yolks of the eggs butter, Balt and pepper and beat up again, then add the whites of the eggs and beat up the whole lightly. Fry 8 tablespoonful at a time in smoking hoi fat. If in shallow fat in a frying-pan, fold ovr when the edges have set. Frj -to a golden brown and serve hot. Hall the quantities may be used if desired
Pilgrim Salad.
Peel and cut tomatoes In half-lncl: slices, stamp out rounds from the cen. ter of each and insert four or flvt cooked asparagus tips:' Lay them on crisp lettuce leaves. Cut the center* of the tomatoes into cubes,and put these with several olives on one sid« of each plate. Put half a cupful oi olive oil into a pitcher, the strained juice of half an orange, one teaspoonful of salt, a quarter of a teaspoonful of paprika, one teaspoonful of Worcea tershire sauce, a quarter of a tea spoonful of mustard, and one teaspoonful of finely chopped parsley. Shake until thick and creamy and pour over the portions of salad.
Chicken With Hollandaise.
Singe the chicken, split down the back and wipe with a damp cloth. Season well with salt and pepper. Pub the fowl with butter, letting er part go on the breast and legs. Dredge with flour and put in'the broiler with the breast to the heat at first When the chicken is a fine brown, which will be in about fifteen minutes, place in a pan in a moderate oven for twelve minutes. Put on a hot platter with butter and serve immediately. This is for a chicken weighing about two and a half pounds.
Meat Loaf With Tomato Sauce.
Two pounds ground round steak, two eggs, one and one-half teaspoonsful Balt, a dash of pepper, one-fourth cup milk, one-third cup bread crumbs, a little onion or celery salt, one table spoonful butter. Mix and mold into loaf, place in pan with a little hot wa ter, bake one and one-half hours. Sauce —One cnp tomato sauce, on* tablespoonful butter, one-half tee spoonful salt, a little pepper; cook together, thicken with a little flour, and pour over, loaf when baked.
Luncheon Biscuit.
Mix with one pound of bread dough a tablespoonful of shortening and twc tableapoonfuls of sugar; roll into this sheet; cut in two, spread on one-hali of a cupful of currants, one-half of » cupful of raisins and half an ounc« each of lemon and citron peel, chop ped fine. Cover with other half, pass lng the rolling pin over a few times; cut into fancy shapes, brush will white of egg; let stand half an hour bake In a hot oven IK minutes.
