Lemon Curd.
Method —Pour the boiling milk over the crumbs, and when cool add the well-beaten eggs, the butter, one ounce of sugar, and the grated rind of the lemon. Mix well, and then pour into the pie dish. Bake this lightly and let it cool. Spread a layer of lemon curd over the pudding and cover this again with a meringue by whipping the whites of the eggs, with three ounces of sugar, and adding the juice of the lemon, by degrees. Return to the oven to set and get well browned. This pudding is best eaten cold.
