Fish Cakes.

Pick tlte cooked fish apart being careful to free it entirely of bones. Reject the skin. Add to the shredded flesh hair! its amount of dried bread crumbs and seasoning to taste. Moisten with enough milk to allow the mixture to be molded into cakes and stir in an egg. Form into cakes about two inches in diameter and half an inch thick. Fry in hot lard as you would meat. Minced parsley makes an excellent garnishing, ,
