Little Lobster Salads.

Rub the yolks of four hard-boded eggs through a sieve, season with salt, pepper and cayenne, and add by degrees four tablespoonfuls of salad oil. When a smooth paste Is formed pour in a teaspoqnful of vinegar, a gill of cool liquid aspic Jelly and a gid of double cream. Have ready some of the best portions Of a lobster, coarsely chopped, add to the mixture, and fill some small china cases .which have been lined with aspic JeUy< pour In a little cool aspic over the Oiling, and put the molds In a cool place or on Ice till required.
