To Peel Eggplant

Cut the egg plant in slices abou&hK eighth of an inch thick. Then take a grapefruit knife and run it around the edge of each slice. This will remove the peeling all in one piece. Besides saving those and avoiding waste by thick peeling your pieces of egg plant are a better shape.
