Potato Cylinders.

Pare and parbiol ten large potatoes. Take an apple corer and with it cut out as many cylinders as you can from the potatoes; the shells may be used for mashed potatoes. When ready to use cover them with boiling salted water and simmer until tender. Drain and cover with melted butter and chopped parsley.
