Recipes Used in Demonstration At Domestic Science School.

The following recipes have been used by Miss McCheyne, of Purdue university, who conducted the domestic science course at the library auditorium last week, and are published at the earnest request of several ladies who attended the course: VEGETABLES. Boiled Rice, Tomato Sauce—l cup tomato juice, 1 tablespoon flour, 1 tablespoon butter, 1 teaspoon salt. Potato Croquettes.—2 medium potatoes, 1 tablespoon butter, 1 tablespoon milk, 2 tablespoons bread crumbs, 1 egg, salt and pepper to taste. Corn Chowder. —1 cup corn, 4 cups sliced potatoes, 1 cup milk, 1 sliced onion, % pound salt pork, salt and pepper. Creamed Carrots.—l cup diced carrots, 1% cup, one to one white sauce. White Sauce. —1 cup milk, 1 tablespoon flour, 1 tablespoon butter, 1 teaspoon salt. EGGS AND CHEESE ~ Cheese Croquettes.—White sauce, 1 to 4, % cup, 2 egg yolks, % cup cheese. Lucanian Eggs.—l% cup white sauce, 1 to 2, 5 hard boiled eggs, 1 cup cooked macaroni, % cup grated cheese, seasoning, buttered crumbs. Tomato Rarebit.—2 tablespoons butter, 2 tablespoons flour, % cup cream, % cup tomatoes, V 4 teaspoon soda, 2 cups cheese, 2 eggs, salt, pepper, mustard. Omelet. —2 eggs, 4 tablespoons liquid, % teaspoon salt. BREAD AND ROLLS. Yeast.—4 medium raw potatoes, 1 quart boiling water, % cup sugar, 1 tablespoon salt, 1 dry yeast cake. White Bread.—l cup yeast, % cup sugar, % cup shortening, 1 qt. scalded cooled milk, 1 tablespoon salt. Parker House Rolls.—l cup milk, % cup yeast, 2 tablespoons warm water, 2 tablespoons sugar, 2 tablespoons butter, 1 teaspoon salt, flour to make stiff. DESSERTS. Lembn Suet Pudding.—l% cup suet, 1% cup bread crumbs, 2 small lemons, % cup sugar, 1 cup flour, 2 eggs, milk to moisten Lemon Sauce. —1 cup boiling water, % cup sugar, 1 tablespoon corn starch, 1 tablespoon butter, flavor — lemon. Oi’iiige pudding.—l 1-3 cap stale bread dnimbs, 1 cup cold water, 1 cup sugar, 1 cup orange juice, % lomon juice, 2 egg yolks, 1 tablespoon gutter, M teaspoon salt. Meringue—2 tablespoons powdered sugar, teaspoon orange ext., 2 egg whites. Sour Cream Fruit Pudding.—l cup sour cream, 1 cup fruit, 1 cup brown sugar, 1 tablespoon spice, 1 teaspoon soda, flour to make stiff. Hard Sauce.—l tablespoon butter, 6 tablespoons powdered sugar, flavoring. Spanish Cream.—2 tablespoons gelatine soaked in 2 of cold water, custard, 1 cup of milk. 1 egg yolk, white of egg, uavoring. Mrs. Martha Chaney* age ninetytwo. the oldest woman in Hamilton county, died Monday night. She Is survived by two sons and a daughter. She lived in the county eighty years. She was regarded as one'of the best Bible students in the state.
